EASY BAKE OVEN MUFFINS
Easy Bake mixes are expensive, and I've been less than satisfied with using cake mixes and water. Then I found muffin mixes, which are complete except for adding milk or water. The results are much more cake-like in texture. The mixes come in pouches near the cake mixes, and at my store are brands such as Betty Crocker, Martha White, and the store brand. Just make sure to use a mix that only calls for adding milk or water.

Tips:
- Mise en Place: Before starting, measure and gather all ingredients and equipment. This will ensure a smooth and organized baking process.
- Use Room Temperature Ingredients: For optimal results, bring your ingredients to room temperature before mixing. This will help the ingredients blend together more evenly and create a better texture.
- Activate the Yeast Properly: To ensure the muffins rise properly, activate the yeast according to the recipe's instructions. This usually involves dissolving the yeast in warm water with a bit of sugar.
- Knead the Dough Thoroughly: Kneading the dough helps develop the gluten, which gives the muffins their structure and texture. Knead the dough for at least 5 minutes, or until it becomes smooth and elastic.
- Let the Dough Rise Twice: After kneading, let the dough rise in a warm place until it doubles in size. Then, punch down the dough and shape it into muffins. Let the muffins rise again until they are puffy and almost doubled in size.
- Bake at the Right Temperature: Preheat your oven to the correct temperature before baking the muffins. The ideal temperature for baking English muffins is 400°F (200°C).
- Don't Overcook the Muffins: Overcooked muffins will be dry and tough. Bake the muffins for the recommended time, or until a toothpick inserted into the center comes out clean.
