Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 4

500 g baby carrots, peeled and halved lengthways
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 teaspoons light muscovado sugar

Steps:

  • Heat the oven to 180/gas mark 4.
  • Cook the carrots in boiling water for 10-15 minutes until they are starting to soften, but still have some bite. Drain and pat dry.
  • Spread the carrots out in a roasting tin. Drizzle with the oil and vinegar, then sprinkle with sugar. Season well with sea salt and black pepper, then roast for about 45 minutes, turning occasionally until the sugar has caramelised and the carrots are soft and tender.

Tips:

  • Choose the right carrots: Select firm, brightly colored carrots for roasting. Avoid carrots that are limp or have blemishes.
  • Cut the carrots evenly: This will help them cook evenly. Cut the carrots into 2-inch pieces or quarters, depending on the size of the carrots.
  • Toss the carrots with oil and seasonings: This will help them caramelize and develop flavor. Use a mixture of olive oil, balsamic vinegar, brown sugar, salt, and pepper.
  • Roast the carrots at a high temperature: This will help them caramelize and brown. Roast the carrots at 425°F for 20-25 minutes, or until they are tender and browned.
  • Serve the carrots immediately: Roasted carrots are best served hot. You can garnish them with fresh herbs, such as parsley or cilantro.
