1 clove garlic, sliced
2 heads radicchio, torn into pieces
1/3 cup sun-dried tomatoes, thinly sliced, plus more for topping

Yield Makes 8 crostini

Number Of Ingredients 8

1 small orange
1 head radicchio (about 1/2 pound), cut into 6 wedges
Olive oil, for grilling
Coarse salt and freshly ground pepper
Eight 1/4-inch-thick diagonal slices baguette
1/2 cup fresh ricotta cheese
Honey, for drizzling
Maldon sea salt

Steps:

  • Slice the top and bottom of orange with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the orange over a bowl, cut along both sides of each segment, staying close to the membrane, to release; set aside.
  • Preheat a grill pan over medium-high heat. Brush radicchio wedges with olive oil and season with salt and pepper; grill, turning, until softened and slightly charred, about 3 minutes per side. Remove from grill and set aside.
  • Brush both sides of bread with olive oil. Grill, turning once, until toasted and grill marks appear, about 2 minutes per side.
  • Spread 1 tablespoon ricotta on each slice of baguette. Top with grilled radicchio and drizzle with honey; garnish each with an orange segment. Season with Maldon sea salt and pepper; serve.

Yield Makes 4 servings

Number Of Ingredients 4

2 large heads of radicchio (about 1 pound total), halved through core end, each half cut into 3 wedges with some core still attached
3 tablespoons olive oil
1 tablespoon chopped fresh thyme
Balsamic vinegar (for drizzling)

Steps:

  • Preheat oven to 450°F. Rinse radicchio wedges in cold water; gently shake off excess water (do not dry completely). Place radicchio in large bowl. Drizzle with olive oil and sprinkle with thyme, salt, and pepper; toss to coat.
  • Arrange radicchio wedges, 1 cut side up, on rimmed baking sheet. Roast until wilted, about 12 minutes. Turn over and roast until tender, about 8 minutes longer.
  • Arrange radicchio on platter, drizzle with balsamic vinegar, and serve.

Tips:

  • Choose firm, round heads of radicchio with deep red or purple leaves for the best flavor and texture.
  • Use a sharp knife to thinly slice the radicchio to ensure even marinating and cooking.
  • For a more pronounced bitterness, marinate the radicchio for a longer period of time.
  • Fresh ricotta cheese is the best option for this recipe, but you can also substitute another type of soft, mild cheese such as goat cheese or cream cheese.
  • If you don't have a grill, you can roast the radicchio in the oven at 425°F for about 15 minutes, or until slightly charred and tender.

Conclusion:

Balsamic marinated radicchio with fresh ricotta is a simple yet flavorful dish that is perfect for any occasion. The radicchio is slightly bitter and tangy, while the balsamic vinegar and ricotta cheese add a touch of sweetness and creaminess. This dish is also very versatile and can be served as an appetizer, side dish, or main course.
