Number Of Ingredients 9

1 lb banana blossom
salt, to taste
2 tablespoons oil
1 medium onion, sliced
2 cloves garlic, finely chopped
1 small tomatoes, diced
2 tablespoons vinegar
salt and pepper
1 cup thick coconut milk

Steps:

  • Discard tough outer layers and slice the blossom thinly, first cutting it in two lengthways if it is large.
  • Put the slices in a bowl, sprinkle with a tablespoon of salt, rubbing it well inches Leave for 10-15 minutes, squeeze out juices, rinse under cold water and squeeze dry.
  • Heat oil in a wok or frying pan and saute onion and garlic until golden brown.
  • Add tomato, stir for 3 minutes.
  • Add banana blossom and vinegar and bring to the boil.
  • Simmer for 5 minutes.
  • Taste and add salt and pepper as required.
  • Cook until blossom is tender, then stir in coconut milk and remove from heat.
  • Serve with rice.

4 cups water
1 1/2 cups coconut milk
1/2 cup sugar
1 cup diced sweet potato
1 cup diced plantain (filippino banana)
3 tablespoons water
1 cup of sweet rice powder
1/4 cup tapioca
1 cup of jack fruit (optional)

Steps:

  • In a large pot, bring the 4cups of water and coconut milk to boil.
  • Add 1/4 cup of sugar and simmer.
  • Then add sweet potatoes and plantains and simmer until half done.
  • Add 3 tbs water to the sweet rice powder a little bit at a time until it becomes a big dough ball. Take a little of the mixture at a time and form into balls the size of hazelnuts. Drop the balls into the simmering mix.
  • Add the cooked tapioca, sugar and langka. Stir and cook for 5 minutes.
  • Serve hot or cold.
