1 teasp Baking Soda
1/4 tea salt
1/2 cup applesauce
3/4 cup honey
2 Eggs beaten
3 Bananas overripe and mashed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

2 cups mashed ripe bananas (about 4 medium)

1/4 cup honey
1 teaspoon vanilla or rum extract
1-1/3 cups all-purpose flour
2/3 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup chopped pecans

Steps:

  • In a large bowl, beat butter and sugar for 2 minutes or until crumbly. Beat in egg, then egg white, beating well after each addition. Beat on high speed until light and fluffy. Stir in the bananas, applesauce, honey and extract. Combine the flours, baking soda and salt; gradually add to banana mixture just until moistened., Pour into a 9x5-in. loaf pan coated with cooking spray. Sprinkle with nuts. 1/2 teaspoon salt

1/2 cup chopped walnuts (optional)
1/2 cup shredded unsweetened coconut (optional)

Steps:
