1/2 teaspoon salt
3/4 cup buttermilk (I used 3/4 c1 % milk with 1 T lemon juice)
2 bananas, mashed
2 eggs
1 egg white
1/3 cup canola oil
1 teaspoon vanilla
1 (8 ounce) package light cream cheese, room temp
1/2 cup confectioners' sugar
3 tablespoons 1% low-fat milk
1 teaspoon vanilla

  • Preheat oven to 350-degrees F.
  • To make cake: whisk together dry ingredients (flour - salt) in a medium bowl.
  • In a seperate bowl whisk together remaining cake ingredients (banana - vanilla).

1 3/4 cups flour
1 teaspoon baking soda
1 cup sugar
1/2 cup unsalted butter, softened
