BANANA SNACKING CAKE WITH SALTED CARAMEL GLAZE

Banana Snacking Cake With Salted Caramel Glaze image

This buttery snacking cake is a bit like banana bread, but richer, and topped with a sticky caramel frosting that is dotted with crunchy flakes of sea salt. The frosting, made from brown sugar and heavy cream, is easier than a classic caramel, but just as compelling, with the sea salt contrasting perfectly with its sweetness. It's important to use ripe bananas here. Soft, spotty ones with dark yellow skins will be the sweetest and most complex. Firm, pale yellow bananas just don't have enough intensity to flavor the cake.

Time 1h

Yield 12 servings

Number Of Ingredients 16

1/2 cup/115 grams unsalted butter (1 stick), melted, plus more for pan
1 1/2 cups/185 grams all-purpose flour
1/4 cup/50 grams granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon fine salt
1 cup/250 grams mashed banana (from 2 to 3 very ripe bananas)
1/4 cup/60 milliliters sour cream
2 tablespoons dark brown sugar
2 large eggs
1 teaspoon vanilla extract
4 tablespoons/65 grams unsalted butter (1/2 stick), cut into pieces
1/3 packed cup/70 grams dark brown sugar
1/4 cup/60 milliliters heavy cream
Large pinch of fine sea salt
1/4 cup/30 grams confectioners' sugar
Flaky sea salt, for serving

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-9-inch pan, and then line with parchment paper, letting the two long ends hang over the edges by at least 2 inches.
  • In a large bowl, whisk together flour, granulated sugar, baking soda and salt. Whisk in bananas, melted butter, sour cream, brown sugar, eggs and vanilla.
  • Scrape into baking pan and smooth the top. Bake until the top springs back when lightly pressed in the center, and a toothpick inserted in the center comes out clean, about 25 minutes. Let cool completely.
  • When cake is cool, make the glaze: In a medium or large pot (not a small one because the mixture will bubble up), combine butter, brown sugar, heavy cream and salt. Bring to a full boil and continue to boil over medium heat for 1 minute. Remove from heat and let sit for 5 minutes.
  • Whisk in confectioners' sugar until smooth, then immediately pour over cooled cake. Spread evenly across cake and let set for at least 30 minutes. Sprinkle with flaky sea salt before serving.

MOM'S BANANA GLAZE PIE

Mom's Banana Glaze Pie image

My mom has been making this for as long as I can remember. We thought that we lost the recipe but as she was going through her recipe drawer - there is was! We were so happy because mom turned 86 this year and if we had lost it, I know we would never have made it again. Hope you enjoy it like our family does!

Provided by Lib Grimmett

Categories     Pies

Time 40m

Number Of Ingredients 7

1 precooked pie shell
1/2 c sugar or a little more
1 1/2 c water
4 Tbsp corn starch - level
1/2 tsp salt
1 tsp vanilla
1 dash(es) yellow food color - just a drop

Steps:

  • 1. Boil over low fire (after you have mixed all ingredients above except vanilla). Stirring constantly until it thickens.
  • 2. Remove from range and add drop of yellow food color and vanilla.
  • 3. Pour over sliced bananas in precooked pie shell while mixture is still hot. You will need enough bananas to slice a couple of layers into the pie shells before you add the glaze. You can also sub bananas with other fruit - we just always used bananas!
  • 4. After cooling, top with whipped cream that is sweetened.

Tips for Making Banana Glaze:

  • Choose ripe bananas for a sweeter and more flavorful glaze.
  • Use a food processor or blender to create a smooth and lump-free glaze.
  • Adjust the amount of honey or maple syrup depending on your desired sweetness level.
  • Add a splash of lemon juice or orange juice to brighten up the flavor of the glaze.
  • For a thicker glaze, simmer it over low heat until it reduces slightly.
  • Use a pastry brush to apply the glaze evenly to your baked goods.
  • If you are glazing a cake, allow the glaze to cool slightly before pouring it over the cake to prevent it from seeping into the cake.

Conclusion:

Banana glaze is a versatile and delicious glaze that can be used to enhance the flavor of a variety of baked goods. It is easy to make and can be customized to your liking. Whether you are looking for a simple glaze for your morning muffins or a more decadent glaze for your special occasion cake, banana glaze is sure to please. So, next time you are looking for a way to add a touch of sweetness and flavor to your baked goods, give banana glaze a try. You won't be disappointed!
