1 cup greek yogurt
3 cups oats
1 cup whole milk
topping of your choice, as desired

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, maple syrup, salt, baking powder, vanilla extract, cinnamon, and Greek yogurt into mixture.
  • Add oats and milk, and mix. Let the mixture sit for a few minutes, so the oats soak up the liquid and the consistency is like oatmeal.
  • Line muffin tins with muffin liners. Pour the mixture into each muffin cup about ¾ full. Add your preferred toppings and gently push your toppings into each muffin cup.

1 cup white whole wheat flour or 1 cup all-purpose flour
1/4 cup light brown sugar (or more)
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1 cup instant oats, flavored (2 packets) or 1 cup unflavored oats (2 packets)
2 eggs
2 tablespoons canola oil
1 cup mashed banana (about 3 medium)
1/2 cup low-fat buttermilk (or tbsp vinegar added to milk)

Steps:

  • Preheat the oven to 375 f.
  • Prepare a 12 cup muffin pan with paper paper liners, a thin coating of oil or cooking spray.
