1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your muffins will be.
  • Don't overmix the batter: Overmixing can make your muffins tough.
  • Fill the muffin cups only 2/3 full: This will allow the muffins to rise properly.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.
  • Let the muffins cool completely before serving: This will allow the flavors to develop and the muffins to set.

They are perfect for using up ripe bananas, and the crunchy granola topping adds a nice touch of texture and flavor. Whether you're a seasoned baker or a beginner, you're sure to love this recipe.
