  • Preheat oven to 350 degrees F. Combine flour, sugar, baking powder and salt in a medium mixing bowl. Whisk together egg, bananas, oil and vanilla. 3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)

140g caster sugar
1 beaten egg
225g plain flour
2 tsp baking powder
4 very ripe bananas
