- Batter: In a large bowl, combine all of the ingredients until a smooth batter is formed.
- Sauce: In a saucepan over medium-high heat, melt the butter, then add the brown sugar. Stir continuously until the sugar has dissolved. Add the cinnamon and orange juice and bring to a simmer. Remove the pan from the heat, pour in the rum and creme de banana, if using, then return the pan to the heat. Brush down the sides of the pan with water using a pastry brush. Remove from heat.

- For the whipped cream cheese: Put the cream cheese, vanilla and orange zest in the bowl of a stand mixer fitted with the whip attachment and whip until light and fluffy. Add the cold heavy cream and whip until soft peaks form. Cover and refrigerate until ready to use.

- 1. Butter a 9" x 13" casserole dish.
- 2. Melt butter in a medium sauté pan over medium-high heat. Once foaming , add bananas and sauté until softened, about 2 minutes. Add the 1/3 cup brown sugar and stir until it melts with the butter. Carefully add the rum and let cook for one more minute, until the mixture is thick and syrupy. Remove from heat and cool.
