2/3 cup packed brown sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1-3/4 cups whole milk
1/4 cup heavy whipping cream
2 tablespoons dark rum or 1/2 teaspoon rum extract
1 teaspoon vanilla extract
2 medium bananas
1 teaspoon lemon juice
Optional: Sliced bananas and hot caramel ice cream topping

Steps:

  • In a small bowl, beat the egg yolks, brown sugar, salt and cinnamon for 4 minutes; set aside. , In a small heavy saucepan, heat milk and cream until bubbles form around sides of pan. Whisk a small amount of hot mixture into the egg mixture. Return all to the pan, whisking constantly., Cook and stir over medium heat until mixture reaches at least 160° and coats the back of a spoon. Quickly transfer to a large bowl; place in ice water and stir for 2 minutes. Stir in the rum and vanilla. Mash bananas with lemon juice; stir into the rum mixture., Press waxed paper onto surface of custard. Refrigerate for several hours or overnight., Fill the cylinder of an ice cream freezer two-thirds full; freeze according to the manufacturer's directions. When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving., If desired, top with sliced bananas and caramel topping.

2 tablespoons salted butter
1/2 cup orange juice
1/4 cup packed light brown sugar
1/2 teaspoon pumpkin pie spice
2 bananas
1/4 cup bourbon
1 pint vanilla ice cream
1/4 cup chopped pecans or walnuts

Steps:

  • Melt the butter in a large nonstick skillet over medium heat. Stir in the orange juice, brown sugar and pumpkin pie spice and bring to a simmer. Slice the bananas and add to the skillet, stirring to coat. Saute until the bananas are tender and the sauce coats them, 2 to 3 minutes. Turn off the heat and add the bourbon. Light the liquid in the skillet with a click lighter and flambe, allowing the flames to subside. Turn on the heat and cook about 1 minute. Serve in bowls, warm, over vanilla ice cream with a sprinkle of nuts.

1 stick salted butter
1 cup packed dark brown sugar
1/2 cup heavy cream
2 bananas
1/2 cup chopped walnuts or pecans
1/2 cup dark rum
Dash cinnamon
Vanilla Ice Cream, for serving

Steps:

  • Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
  • Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
  • Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
  • Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

2 bananas, peeled and halved lengthwise and crosswise
2 fluid ounces rum
1 fluid ounce banana liqueur
2 pinches ground cinnamon

2 small sprigs of mint

Steps:

  • Melt butter and brown sugar together in a skillet over medium-high heat until butter melts and mixture begins to bubble, 3 to 5 minutes.

1 cinnamon stick
1 strip lemon, zest of, 1 to 2 inches long by about 1 1/2 inch wide
2 large firm ripe bananas, peeled and halved lengthwise and then crosswise
4 tablespoons dark rum
1 pint vanilla ice cream, divided among four bowls

  • Melt the butter in a heavy-bottomed 12-inch skillet over medium heat.
  • Add the brown sugar, cinnamon stick, and lemon zest; stir to dissolve the sugar, about 1 minute.
