1 large Spanish onion, coarsely chopped
5 cloves garlic, coarsely chopped
1/2 cup red wine vinegar
2 (16-ounce) cans plum tomatoes, pureed with their juices
5 dried red New Mexico chiles, stemmed, seeded, and coarsely chopped
1 cup ketchup
1/4 cup Worcestershire sauce
3 tablespoons Dijon mustard
3 tablespoons dark brown sugar
2 tablespoons honey
1/4 cup molasses
1 tablespoon pure maple syrup
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oil in a heavy medium saucepan over medium-high heat. Add the onion and cook until soft, about 4 minutes. Add the garlic and cook for 1 minute. Stir in the vinegar and cook until reduced by half, 2 minutes. Add the pureed tomatoes, 1 cup water, and the chiles, bring to a boil, and simmer for 10 minutes.
  • Add the ketchup, Worcestershire, mustard, brown sugar, honey, and molasses and simmer, stirring occasionally, until thickened, 30 to 40 minutes.
  • Transfer the mixture to a food processor and puree until smooth. Return the mixture to a medium saucepan over high heat, add the maple syrup, and cook until slightly thickened, about 5 minutes. Season with salt and pepper. Pour into a bowl and allow to cool. The sauce will keep, stored in a tightly sealed container, in the refrigerator for 1 week.

  • BOURBON BARBECUE SAUCE
  • (makes about 3 cups)
  • Bring 2 cups bourbon to a boil in a small saucepan over high heat and cook until reduced by half to 1 cup, about 4 minutes. Whisk in 1/2 cup lightly packed dark brown sugar and cook, whisking occasionally, until thickened and the sugar melts, about 4 minutes. Remove from the heat and let sit at room temperature. Add to Bar Americain Barbecue Sauce when you add the maple syrup.

1 cup medium diced onions

2 teaspoons garlic salt

3 cups ketchup

  • In a large pot, melt half of the butter on medium heat. Add the onions and sweat until the onions are translucent, 3 minutes. 4 cups shrimp shells
1/3 cup cognac
1/2 cup white wine
1/3 cup eating well's rich fish stock
6 garlic cloves, finely minced
4 shallots, thinly sliced
1/4 teaspoon dried tarragon
1/8 teaspoon cayenne pepper
1 pinch nutmeg
1 pinch ground ginger
1 pinch ground cloves
1/4 cup eating well's fresh tomato puree
2 teaspoons lemon juice
1/8 teaspoon salt
1 dash Tabasco sauce

Steps:

  • Coarsely chop shrimp shells. Place chopped shells in a 5 quart non-aluminum saucepan and add cognac, wine, stock, garlic, shallots, herbs and spices.
  • Cover and cook over medium heat 15-20 minutes, or until the shallots are quite limp.
  • Strain mixture through a fine sieve, pressing down with a spoon to force all of the liquid through. Discard solids. Return stock to a clean saucepan.
  • Stir tomato puree into stock and cook, uncovered for 5 minutes, or until sauce thickens slightly.
  • Remove from heat and add remaining ingredients.

She said that about 20 years ago she asked a chef on the show to make three types of barbecue sauces: one mustardy, one tomatoey, and one Chinesey. When she tasted them, the first one was too mustardy, the second was too tomatoey, and the third was too Chinesey! She decided to try combining the three, and she said it turned out being the best sauce she'd ever tried. This is the result, and it's her favorite to this day.

1 1/2 cups chopped yellow onions (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil

1/2 cup soy sauce
1 cup hoisin sauce
