Barbecue-Rubbed Scallops with Creamy Sauerkraut Soup image

Number Of Ingredients 21

For sauerkraut soup:
3 tablespoons unsalted butter, divided
1 bacon slice, cut into 1-inch pieces
1/2 cup chopped white onion
1 cup drained sauerkraut (5 ounces), rinsed
1/3 cup dry white wine
2 1/2 cups chicken stock or reduced-sodium chicken broth
1/4 cup heavy cream
1 teaspoon Dijon mustard
2 teaspoons sour cream
For scallops:
1/2 teaspoon all-purpose flour
1 teaspoon sumac
1/2 teaspoon sweet smoked paprika (pimentón dulce)
1/4 teaspoon ground coriander
1/4 teaspoon white pepper
Rounded 1/8 teaspoon cayenne
1 teaspoon kosher salt
12 large sea scallops, tough ligament removed from side of each if attached
2 tablespoons olive oil
Garnish: baby arugula

Steps:

  • Make soup:
  • Melt 1 tablespoon butter in a 5-quart pot over medium heat, then cook bacon and onion, stirring occasionally, until most of bacon fat is rendered, about 5 minutes. Add sauerkraut and wine and simmer briskly, uncovered, until most of wine has evaporated, about 3 minutes.
  • Stir in stock and heavy cream, then simmer gently, uncovered, stirring occasionally, 20 minutes.
  • Remove from heat and stir in mustard, sour cream, and remaining 2 tablespoon butter. Purée soup in batches in a blender until smooth and creamy (use caution when blending hot liquids), then return to pot. Season with salt and pepper. Keep warm.
  • Cook scallops:
  • Mix flour, spices, and kosher salt in a bowl. Pat scallops dry, then generously coat one side of each scallop evenly with spice mixture.
  • Heat oil in a 12-inch heavy nonstick skillet over medium-low heat until it shimmers. Cook scallops, plain side down first, turning once, until just cooked through, 5 to 6 minutes total. Reserve spiced cooking oil.
  • Divide soup among 6 bowls. Place 2 scallops in each bowl and top with arugula. Drizzle soup with reserved oil.

1 cup finely chopped mustard greens
1 cup fresh parsley, chopped
1 cup fresh mint, chopped
1/2 cup fresh tarragon, chopped
2 tablespoons capers, chopped
4 anchovies in oil, finely chopped
2 cloves garlic, finely chopped
Grated zest of 2 lemons
1 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 tablespoon Spanish smoked paprika
1 teaspoon packed light brown sugar
1 teaspoon ground cumin
1/2 teaspoon ground fennel seed
1/2 teaspoon ground coriander
1/2 teaspoon mustard powder
Kosher salt
12 large sea scallops, patted dry (about 1 pound 2 ounces)
Freshly ground pepper
1 tablespoon canola oil
1/4 cup grated Cotija cheese
Thinly sliced Fresno chiles, rocoto or ajì panca chile paste, and microgreens, for garnish

Steps:

  • Make the salsa verde: Combine the mustard greens, parsley, mint, tarragon, capers, anchovies, garlic and lemon zest in a large bowl. Stir in the olive oil and season with salt and pepper. Let sit at room temperature for at least 30 minutes before serving.
  • Make the scallops: Combine the paprika, brown sugar, cumin, ground fennel, coriander, mustard powder and 1 teaspoon salt in a small bowl. Season the scallops on both sides with salt and pepper, then sprinkle all over with the spice mixture. Rub the spices into the scallops.
  • Heat the canola oil in a large nonstick skillet over high heat until the oil begins to shimmer. Add the scallops to the pan in a single layer and cook until the bottoms are golden brown, about 2 minutes. Flip and cook until the other side is golden brown and the scallops are just cooked through, about 2 more minutes.
  • Serve 2 or 3 scallops per plate; top each scallop with a dollop of salsa verde, sprinkle with the Cotija cheese and top with a Fresno chile slice. Serve with chile paste and garnish with microgreens.

1 pound scallops, rinsed and drained
2 tablespoons butter
1 bunch green onion, minced
4 ounces fresh mushrooms, sliced
2 tablespoons all-purpose flour
1 cup milk
½ cup dry white wine
1 teaspoon salt
1 pinch ground white pepper
½ cup shredded Swiss cheese
2 tablespoons chopped fresh parsley

Steps:

  • Wash and drain scallops. If scallops are large, cut in half. In a small stock pot, melt butter over medium-low heat. Saute onions and mushrooms until tender.
  • Stir in flour. Pour in milk and stir over medium heat until thickened and bubbly. Add wine, scallops, salt and pepper. Cook over medium heat until thickened. Serve topped with Swiss cheese and parsley.

12 ounces frozen sea scallops, thawed and drained
1 teaspoon dried thyme
1 teaspoon fresh coarse ground black pepper
1 teaspoon kosher salt
1 teaspoon lime zest or 1 teaspoon lemon peel

Steps:

  • Thread scallops onto skewers. If using bamboo skewers, soak in water for 10 minutes before using.
  • In a small bowl, combine remaining ingredients and then rub onto scallops.
  • TO GRILL: Place on oiled grill over hot coals. Grill for 2-3 minutes per side until opaque throughout.
  • TO BROIL: Place on broiler pan and broil 4-5 inches from heat source for 2-3 minutes per side until opaque throughout.

16 large sea scallops

Steps:

  • Mix bread crumbs, Parmesan cheese, parsley, garlic salt, and black pepper together in a bowl.
  • Pour olive oil into a shallow bowl.
  • Rinse scallops under cold water, then dip into the olive oil.

1 lb smoked sausage, left in casing (Keilbasa)
6 tablespoons chopped onions
2 small potatoes, in a small dice (optional)
1/4 cup all-purpose flour
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
3 cups whole milk
1 cup half-and-half cream
8 ounces sauerkraut, with the liquids
1 1/2 tablespoons lemon juice (this will make it more sour, taste to your desired likness before adding.) (optional)
2 tablespoons finely chopped Italian parsley (to garnish)

Steps:

  • Chop the sausage coarsely into small pieces.
  • Place the onion potato and sausage into saucepot and saute over med.
  • heat, until meat is lightly browned, about 6 minutes.
  • Combine the flour, thyme, and pepper and add to meat mixture and cook over med.
  • heat until flour bubbles, about 6 minutes.
  • Add milk, cream and cook until bubbling about another 6 minutes.
  • Add the sauerkraut and bring to a boil.
  • Taste now for seasonings, and if not too tart for you, you can add the lemon juice now.
  • Boil until thickened.
  • Add parsley and serve--.
