- Dip washed, boneless, skinless chicken breasts into beaten eggs.
- Roll chicken into Italian bread crumbs - cover liberally.
- Brown chicken in large skillet in butter on medium heat (approximately 8 minutes per side)
- Lay a slice or two of mozzarella cheese on top of browned meat.
- Cover generously with sweet barbecue sauce.
- Cover skillet and simmer for approximately 20 minutes.

- Preheat an outdoor grill to medium-high. Make sure the grates are clean so the chicken doesn't stick.
- Arrange a chicken breast between two sheets of plastic wrap. On a work surface, using a meat mallet or small heavy pan, pound the chicken evenly until it is 1/4-inch (6 millimeters) thick. Remove the plastic wrap and transfer to a baking sheet; repeat with the remaining chicken breasts. Brush both sides of each chicken cutlet lightly with oil.

- Place flour and eggs in two other medium bowls.
- Roll the chicken breast in the flour, dusting off any excess. Dip the chicken into the egg, then place into the breadcrumbs, coating it completely.
