1 pound 16 ounces of your favorite store-bought or homemade pizza crust
1 cup of your favorite barbecue sauce
1 cup crispy salt & pepper tofu pieces -or- 1 cup large-diced cooked chicken
1/2 small red onion (thinly sliced)
8 ounces mozzarella cheese
Kosher salt
Handful of fresh cilantro (coarsely chopped)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Roll/pull/flatten the pizza crust dough to about 14 inches in diameter (if making one tofu and one chicken pizza, divide dough in half and shape into two pizzas about 8 inches in diameter.)
  • Brush a cookie sheet with a little olive oil and carefully lay the pizza crust(s) on the cookie sheet.
  • Spread 1/2 cup of the barbecue sauce onto the dough, leaving about a 1/2 inch border around the edges. (If making two pizzas, spread 1/4 cup on each pizza).
  • Add tofu or chicken to a small bowl and add remaining barbecue sauce. Carefully toss and evenly place pieces over pizza crust. (If making two pizzas, place tofu in one bowl and chicken in the other, and pour 1/4 cup sauce over each. Toss and spread on respective crusts.)
  • Lay sliced red onions over the top.
  • Sprinkle with shredded mozzarella cheese.
  • Bake for about 10 minutes, until the crust is golden brown and the cheese is completely melted.
  • Remove from the oven and sprinkle a pinch of kosher salt and the fresh cilantro over the top.
  • Slice and serve!

10 ounces chicken breast or boneless, skinless thighs, cut into 1-inch pieces
1 teaspoon kosher salt
3 tablespoons olive oil
1/4 cup plus 2 tablespoons barbecue sauce
2 17-ounce balls pizza dough (see recipe)
8 ounces fresh mozzarella, roughly sliced
1/2 red onion, cut into 1/4-inch slices
2 ounces Gouda, roughly grated
A few sprigs fresh cilantro, for garnish

Steps:

  • Heat oven to 500. Season the chicken with salt, and heat 1 tablespoon of oil in a saucepan over medium heat. Toss the chicken into hot oil, and cook for about 5 minutes, shaking the pan occasionally, until you no longer see any pink. Add 2 tablespoons of barbecue sauce, and stir well, then set aside off the heat.
  • Working on two separate pieces of parchment paper, use your hands to stretch the 2 balls of dough into 2 rough circles, about 12 inches in diameter. Slide each piece of parchment paper onto a baking tray, and finish assembling pizza there: Drizzle with remaining olive oil, spread with remaining barbecue sauce, then evenly divide the mozzarella all over. Top with chicken pieces, red onion and finally Gouda.
  • Bake for 15 minutes, or until dough is cooked through and edges of the onion and cheese are just starting to color. Once the pizza is slightly cooled, season with salt and pepper and scatter with cilantro.

½ cup barbeque sauce, divided
1 (13.8 ounce) package refrigerated pizza dough

  • Preheat grill for medium heat and lightly oil the grate.

2 tablespoons barbecue sauce (we used KC Masterpiece)
4 ounces cooked grilled chicken breasts, cubed (we cook ours on the grill)
1 slice red onion, diced
1/4 teaspoon dried rosemary
1/4 cup reduced-fat mozzarella cheese, shredded

Steps:

  • Preheat oven to 425.
  • Place pita on a baking sheet and spoon barbecue sauce evenly over the pita.
  • Top with Chicken, onions, rosemary & cheese.
  • Bake for 10 - 12 minutes or until the cheese is melted, the pizza is heated through and the pita crisp.
