Time 4h35m

Number Of Ingredients 15

1/4 cup vinegar
2 tablespoons sugar
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1 onion, minced
1 teaspoon chili powder
5 drops Tabasco sauce
1/2 cup water
1 teaspoon dry mustard
1 1/2 teaspoons salt
1 tablespoon lemon juice
1/4 cup salad oil
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1 bear roast

Steps:

  • Mix all sauce ingredients except ketchup and Worcestershire sauce.
  • Simmer 20 minutes, uncovered.
  • Add ketchup and Worcestershire sauce and bring to a boil.
  • Remove from heat.
  • Place bear roast in oven at 325 degrees.
  • Roast 3-4 hours or until tender.
  • Baste frequently with sauce.

Tips:

  • Choose the Right Cut of Bear Meat: Select tender cuts like the backstrap, tenderloin, or rib roast for grilling. Avoid using cuts with a lot of connective tissue, such as the brisket or shank.
  • Marinate the Bear Meat: Marinating the bear meat helps tenderize it and infuse it with flavor. Use a marinade made with acidic ingredients like vinegar or citrus juice, along with herbs, spices, and seasonings. Marinate the meat for at least 4 hours, or overnight.
  • Cook the Bear Meat Over Indirect Heat: When grilling bear meat, use indirect heat to prevent it from drying out. Set up your grill for two-zone cooking, with the heat source on one side and the meat on the other side.
  • Use a Meat Thermometer: To ensure that the bear meat is cooked to your desired doneness, use a meat thermometer. The internal temperature of the meat should reach 145°F (63°C) for medium-rare, 160°F (71°C) for medium, and 170°F (77°C) for well-done.
  • Let the Bear Meat Rest: Before slicing and serving the bear meat, let it rest for 10-15 minutes. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Grilling bear meat can be a delicious and rewarding experience. By following these tips, you can ensure that your grilled bear meat is tender, flavorful, and cooked to perfection. Experiment with different marinades, cooking times, and doneness levels to find what you enjoy best. With a little practice, you'll be able to grill bear meat like a pro!
