  • Preheat oven to 350°. In a large saucepan, melt butter over medium-high heat. Add onion; cook and stir until tender, 8-10 minutes. 24 large head-on shrimp (about 2 pounds), peeled and deveined, tails left on, shells and head reserved
1 tablespoon cracked black peppercorns
2 teaspoons Emeril's Creole Seasoning (sold in supermarkets) or other Creole seasoning
1 1/2 teaspoons chopped fresh rosemary
3 tablespoons olive oil
1 cup dry white wine
3 cups water
3/4 cup Worcestershire sauce, preferably homemade
Juice from 2 lemons (about 1/4 cup)
1/2 cup chopped onion
1 tablespoon minced garlic
1 tablespoon hot sauce
1/4 cup (1/2 stick) unsalted butter, cut into 8 pieces
Jalapeno Biscuits, for serving

Steps:

  • In a medium bowl, toss the shrimp with half of the cracked pepper, 1 teaspoon of the Creole seasoning, and the rosemary until evenly coated. Cover and refrigerate until ready to use.
  • Heat 1 tablespoon of the oil in a 12-inch skillet over high heat. Add the shrimp shells and heads and cook, stirring a few times, for 3 minutes. Add the wine, water, Worcestershire, lemon juice, onion, garlic, and hot sauce. Bring to a boil, reduce the heat to a simmer, and let gently bubble for 45 minutes. Strain through a coarse strainer; you should have about 1 cup of barbecue base.
  • Heat a 14-inch skillet over high heat. Add the remaining 2 tablespoons oil, then the shrimp and cook for 2 minutes, searing on both sides. Pour in the barbecue base, reduce the heat to medium, and simmer until the shrimp are cooked through, about 1 minute. Remove from the heat; whisk in the butter, one piece at a time, not adding another until the previous piece is fully incorporated in the sauce.
  • Transfer the shrimp to a serving platter or small individual plates. Spoon the sauce over the shrimp and serve immediately with the Jalapeno Biscuits.

1 8-ounce package thin rice noodles, such as vermicelli
1 1/4 pounds peeled and deveined large shrimp
2 tablespoons Thai red curry paste
1/4 cup creamy peanut butter
2 tablespoons rice vinegar
1/4 cup drained pickled ginger, chopped, plus 1 tablespoon brine
Kosher salt
1 seedless cucumber, cut into matchsticks
1 yellow bell pepper, thinly sliced
1 carrot, grated
1/2 cup fresh cilantro, roughly chopped

Steps:

  • Preheat a grill to medium high; oil the grates. Bring a medium pot of water to a boil. Add the noodles and cook as the label directs. Drain and rinse under cold water. Toss the shrimp with 1 tablespoon curry paste and the vegetable oil. Let sit at room temperature, about 15 minutes.
  • Meanwhile, whisk the remaining 1 tablespoon curry paste, the peanut butter, vinegar, ginger brine, 2 tablespoons water and a pinch of salt in a large bowl until smooth and thick. Add the cucumber, bell pepper, carrot, most of the cilantro, the ginger and a generous pinch of salt; toss well until the sauce loosens. Cut the noodles into shorter pieces with kitchen shears and add to the vegetables; season with salt and toss well.
  • Grill the shrimp until just cooked through, 2 to 3 minutes per side. Serve on top of the noodle mixture. Top with the remaining cilantro.

We eat this by peeling the shrimps at the table and stirring them into the sauce and don't forget the French bread, it's great dipped into the sauce. This recipe just serves two, if you want to serve it to more than that, it's suggested you do so in separate batches. Recipe is from Chef Paul Prudhomme's Louisiana Kitchen.

2 dozen large shrimp, with shells
1 teaspoon ground red pepper (cayenne)
1 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried rosemary leaves, crushed
1/8 teaspoon dried oregano leaves
1/4 lb butter, plus
5 tablespoons unsalted butter
1 1/2 teaspoons minced garlic
1 teaspoon Worcestershire sauce
1/2 cup shrimp stock or 1/2 cup seafood stock (see my recipe for seafood stock or use your own)
1/4 cup beer, at room temperature

Steps:

  • Rinse the shrimp in cold water and drain well, set aside.
  • In a small bowl combine the seasoning mix ingredients (red pepper through oregano leaves).
  • Combine 1 stick of the butter, the garlic, Worcestershire and seasoning mix in a large skillet over high heat.
  • When the butter is melted, add the shrimp; cook for 2 minutes, shaking the pan (versus stirring) in a back-and-forth motion.
  • Add the remaining 5 tablespoons butter and the stock; cook and shake pan for 2 minutes.
  • Add the beer and cook and shake the pan 1 minute longer and remove from heat.
  • Serve immediately in bowls with lots of French bread on the side, or on a platter with cooked rice mounded in the middle and the shrimp and sauce surrounding it.

¾ teaspoon hot pepper sauce (such as Tabasco®)
2 cloves garlic, crushed
¼ cup tomato-based chili sauce

1 1/2 tablespoons honey
