Steps:
- Place the chicken breasts into a saucepan over medium-low heat, and pour in 1 cup of barbeque sauce. Simmer the chicken until the meat is no longer pink inside, about 15 minutes. Allow to cool, and dice chicken meat.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Drain well in a colander set in the sink. Rinse pasta with cold water until chilled, and drain again thoroughly.
- In a large salad bowl, whisk 1 cup of barbeque sauce with mayonnaise until thoroughly combined. Mix in the cumin, then stir in cooked chicken. Place cooked pasta, jicama, red and orange bell peppers, corn, cilantro, black beans, jalapeno peppers, and red onion into the salad bowl, and gently fold to combine with the dressing. Serve warm or chilled.

I got this recipe from Cook's Country and I constantly get requests to make it. It's packed full of flavor. The white BBQ sauce makes this salad--just look at the ingredients! You'll want to be sure to mince where it says mince and don't leave anything out. All of the flavors together are outstanding. It's also very pretty.

Tips:
- Use high-quality ingredients: Fresh vegetables, flavorful chicken, and a tangy dressing will make a big difference in the taste of your salad. For the chicken, you can use boneless, skinless breasts, thighs, or a combination of both.
- Cook the chicken thoroughly: Make sure the chicken is cooked through before adding it to the salad. You can boil, grill, bake, or pan-fry the chicken. If you're boiling the chicken, be sure to remove it from the water as soon as it's cooked to prevent it from becoming overcooked and dry.
- Don't overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Overcooked pasta will be mushy and won't hold its shape well in the salad.
- Chill the salad before serving: This will help the flavors to blend and will make the salad more refreshing.
- Serve the salad with a variety of toppings: You can add chopped nuts, crumbled cheese, diced avocado, or anything else you like to your salad. This will add flavor and texture to the dish.
Conclusion:
Barbecue chicken pasta salad is a delicious and easy-to-make dish that's perfect for a summer picnic, potluck, or backyard barbecue. With its tangy dressing, tender chicken, and colorful vegetables, this salad is sure to be a hit with everyone who tries it. So next time you're looking for a light and refreshing meal, give this recipe a try. You won't be disappointed!
