Provided by Foodiewife

Number Of Ingredients 7

1 lime, cut in wedges, optional
Kosher salt, optional
1 cup ruby red grapefruit juice
1/2 cup freshly squeezed lime juice (4 limes)
1 cup orange liqueur, such a Triple Sec
1 cup white tequila
2 tablespoons sugar, to taste (optional)

Steps:

  • If you like a salt rim on the glasses, rub the lime around the edge of the glass and then dip the rim of each glass lightly in a plate of kosher salt. Set aside to dry. Combine the grapefruit juice, lime juice, orange liqueur, and ice in a blender and puree until smooth. Pour into a large pitcher and stir in the tequila. If youre not serving the margaritas in salted glasses, stir 1/4 teaspoon of salt into the pitcher of margaritas. Believe me, it will make a difference! Serve ice cold. NOTE: I saved half of the leftover margaritas (there were only two of us) in the freezer. I refreshed them in a blender with a little more ice, and they were perfect!

Categories     Beverages

Time 5m

Yield 1 pitcher, 8 serving(s)

Number Of Ingredients 4

2 cups tequila (suggest Jose Cuervo Gold)
2 cups orange liqueur (prefer Triplesec)
2 cups lime juice (fresh is best)
2 1/2 cups pineapple juice

Steps:

  • Assemble in pitcher. Keep in fridge. Shake with ice before serving.

Tips:

  • Use fresh pineapple juice. Fresh pineapple juice has a brighter, more vibrant flavor than store-bought juice. If you don't have a juicer, you can puree pineapple chunks in a blender and then strain the mixture through a fine-mesh sieve.
  • Chill your ingredients. Chilling your ingredients will help to make your margaritas extra refreshing. You can chill your glasses, tequila, triple sec, and pineapple juice ahead of time.
  • Use a good quality tequila. The tequila you use will make a big difference in the flavor of your margaritas. Look for a tequila that is 100% agave and has a smooth, clean flavor.
  • Don't over-shake your margaritas. Over-shaking your margaritas will make them watery. Shake them just until the ingredients are combined.
  • Garnish your margaritas with a pineapple wedge or lime wedge. This will add a pop of color and flavor to your drinks.

Conclusion:

Barefoot Contessa's pineapple margaritas are the perfect drink to enjoy on a hot summer day. They're refreshing, flavorful, and easy to make. With just a few simple ingredients, you can create a delicious cocktail that will impress your friends and family. So next time you're looking for a tropical drink to enjoy, give Barefoot Contessa's pineapple margaritas a try. You won't be disappointed!
