THICK PEASANT SOUP WITH BARLEY

Thick Peasant Soup with Barley image

You need to be quite hungry for this one because (as its name might imply) it's hefty and substantial.

Categories     Soups     Hearty Soups     Vegetarian recipes

Yield Serves 1

Number Of Ingredients 15

1 small carrot
1 tablespoon single cream
chopped parsley, to garnish
salt and freshly milled black pepper
1 medium onion
1 leek, cleaned
3 inch (7.5 cm) piece of celery
1 heaped tablespoon pearl barley
1 teaspoon tomato purée
¾ pint (425 ml) hot stock, made from Marigold Swiss vegetable bouillon powder, or water
1 oz (25 g) butter
1 small clove of garlic, crushed
1 medium-cut slice from a large loaf or its equivalent
½ oz (10 g) butter
1 level teaspoon sesame seeds

Steps:

  • Start off by whisking the tomato purée into the stock or water, then pour this into a medium-sized saucepan along with the pearl barley. Bring up to simmering point and simmer gently for about 40 minutes or until the barley is tender. Meanwhile, chop all the vegetables very finely (as the pieces are going to be left whole and not liquidised, they do need to start off quite small). Ten minutes before the barley is ready, melt the butter in another saucepan, then stir all the prepared vegetables into it together with the garlic so they get a good coating of fat, then season with salt and pepper, turn the heat down to low, put a lid on and leave the vegetables to sweat to draw out the juices for about 10 minutes. When you take the lid off the fresh aroma is fantastic! Now add the barley and stock to the vegetables and continue to simmer the lot (covered) for a further 10 minutes. Meanwhile, make the sesame toast. Pre-heat the grill and toast the slice of bread on one side only. Then butter it on the untoasted side (right up to the edges) and sprinkle the sesame seeds all over it to cover as evenly as possible, pressing them down so they will stay in position (if you're lucky). Return the bread to the grill. Toast the sesame-encrusted side until the sesame seeds are lightly toasted and the bread itself is golden-brown. Then cut the slice up into four fingers. Stir the cream into the soup and serve it very hot, with the parsley sprinkled over and with the sesame toast.

SPRING BARLEY SOUP

Spring Barley Soup image

This soup is as cozy as mushroom-barley soup and as vibrant as spring. Chewy barley, crisp asparagus and peas lay in a broth bolstered by umami-rich soy sauce and miso. Hits of fresh ginger and vinegar enliven the mix. Feel free to swap in other vegetables that catch your eye: Add leeks and hearty greens with the barley, and quicker-cooking vegetables like sliced turnips or snap peas with the asparagus. For more protein, add cubed soft or firm tofu to bowls, or stir a beaten egg into the pot as you would for hot and sour soup.

Time 45m

Yield 4 servings

Number Of Ingredients 9

1 tablespoon toasted sesame oil, coconut oil or olive oil
6 garlic cloves, coarsely chopped
3/4 cup pearled barley
1 tablespoon soy sauce, plus more to taste
1 bunch asparagus (about 1 pound), tough ends trimmed, stalks thinly sliced 1/4-inch thick, tips left whole
1 cup fresh or frozen shelled peas, edamame or fava beans
3 tablespoons yellow or white miso
1 tablespoon unseasoned rice vinegar
1 (1-inch) piece fresh ginger, peeled and finely grated (about 1 tablespoon)

Steps:

  • In a large pot or Dutch oven, add the oil and garlic, and heat over medium. Cook, stirring, until fragrant and softened but not browned, 2 to 4 minutes. Add 6 cups of water, the barley and 2 teaspoons soy sauce. Bring to a boil over high, then reduce heat to medium and simmer until the barley is tender, 25 to 30 minutes.
  • Add the asparagus and peas, and cook until bright green and crisp-tender, 3 to 4 minutes. Remove pot from heat.
  • In a small bowl or liquid measuring cup, stir a spoonful of the soup into the miso until dissolved. Pour into the pot, along with the rice vinegar, ginger and remaining 1 teaspoon soy sauce; stir to combine. Taste for salt level and adjust with more soy sauce. (Leftovers will keep for up to 2 days; rewarm over low heat, thin with water, and add vinegar and soy sauce to taste.)

Tips:

  • Use high-quality ingredients: Fresh vegetables, flavorful broth, and tender barley will make all the difference in the taste of your soup.
  • Don't overcrowd the pot: If you add too much barley or vegetables to the pot, the soup will be thick and stodgy. Add the barley and vegetables in batches, so they have room to cook properly.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop. The longer you simmer the soup, the more flavorful it will be.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of yogurt to brighten the flavors.
  • Serve the soup hot: Barley peasant soup is best served hot, with a side of crusty bread or crackers.

Conclusion:

Barley peasant soup is a hearty, flavorful soup that is perfect for a cold winter day. It is also a relatively inexpensive and easy-to-make soup, which makes it a great option for busy weeknights. With its combination of barley, vegetables, and flavorful broth, barley peasant soup is a soup that the whole family will enjoy.
