- 1½ pounds skinless, boneless, center-cut fresh or thawed-from-frozen sockeye or coho filets
- 2 tablespoons avocado oil
- 1 cup baby arugula
- ½ cup shaved asparagus tips
- ¾ cup cherry tomatoes, halved
- ¼ cup fresh basil, thinly sliced Caesar Dressing:
- 2 egg yolks
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire
- 1 tablespoon minced capers
- 1 anchovy filet, minced (or ⅛ teaspoons anchovy or fish-based Worcestershire) (optiona
- 1 to 1½ tablespoons fresh squeezed Meyer Lemon or Regular Lemon Juice
- 1 cup mayonnaise (homemade or store-bought) plus extra for garnish
- ⅔ cup finely grated Parmesan
- ⅔ cup very finely grated fresh black summer truffles (or finely grated Parmesan) over the top before serving

1. For herb oil, heat 1 tablespoon avocado oil in a small saucepan over medium heat. Add asparagus tips. Swirl to coat; sprinkle with salt. Cook, covered, until just crisp-tender, 3 to 4 minutes. Uncover, increase heat to medium-high, and cook, stirring frequently, until browned, 2 to 3 minutes longer. With a paring knives, score 5 or 6 diagonal lines into the thickest parts of the fish.
