BASIL CHICKEN SPIRALS WITH MANGO SALSA
I love this recipe! It is one of my favorites to wow a crowd. Most of its wow factor comes from all the fresh ingredients. I always pick up fresh herbs, garlic, cucumbers, and hot peppers-as well as honey and onions when I can- at my local farmers market. All those ingredients give this dish a punch of flavor. -Noelle Myers, Grand Forks, North Dakota

Steps:
- In a small bowl or liquid measuring cup, whisk together the broth, soy sauce, 2 teaspoons cornstarch, vinegar, red pepper flakes and sugar until smooth. Set aside.
- In a medium bowl, toss the chicken with 1 teaspoon salt, 1/2 teaspoon pepper and remaining 3 teaspoons cornstarch.
- In a large 12-inch nonstick skillet, heat the 2 teaspoons oil over medium heat until hot and rippling. Add the chicken, breaking up any clumps, and cook until it is golden brown on all sides and just barely cooked through (it will cook a few minutes longer later in the recipe). Scrape the chicken onto a plate, keeping as much liquid in the skillet as possible.
- Add the garlic, bell pepper, and onion and cook for 3-4 minutes, until the vegetables are crisp-tender.
- Return the chicken and any accumulated juices to the skillet over medium heat. Whisk the sauce quickly before pouring it into the skillet. Add the mango (or pineapple). Cook, stirring constantly, while the sauce simmers and thickens, 1-2 minutes. Season with additional salt and pepper to taste, if needed.
- Sprinkle with basil and serve over rice.

BASIL CHICKEN WITH COCONUT-MANGO SAUCE
The combination of basil and coconut milk is outrageously good, and fresh mango brightens up this dish. Found this great recipe in Chatelaine magazine. Preparation time: 10 minutes Cooking time: 14 minutes Makes: 8 servings

Steps:
- Slice each chicken breast lengthwise into 3 or 4 thick strips. Lightly oil a large wide saucepan and set over medium heat. When hot, add chicken. Stir often until chicken loses its pink color, 4 to 5 minutes. Meanwhile, place onion on a cutting board, cut side down, then thinly slice. Peel mango. Slice fruit from stone in large pieces then cut into thick bite size strips.
- When chicken is no longer pink, remove to a large plate. Pour coconut milk into pan. Pour coconut milk into pan. Increase heat to medium-high. Add onion, dried basil, cumin, chili flakes and salt. Boil, uncovered and stirring often, until sauce is reduced by half, about 4 to 5 minutes. Return chicken and any juices to pan. Reduce heat to medium.
- Add mango and stir often, uncovered, until chicken is springy when pressed, 6 to 8 minute Slice lime in half and cut one half into 6 think wedges. Coarsely chop basil. When chicken is cooked, squeeze juice from half of lime over top. Sprinkle with fresh basil. I found this recipe is great with rice noodles and snow peas. Serve with lime wedges.

Tips:
- For the best results, use fresh basil leaves. If you don't have fresh basil, you can use dried basil, but you'll need to use less of it since it's more concentrated.
- Make sure the chicken breasts are pounded thin before wrapping them around the basil leaves. This will help them cook evenly.
- If you don't have a meat mallet, you can use a rolling pin to pound the chicken breasts.
- Be careful not to overcook the chicken. Cook it just until it is cooked through, or it will become dry and tough.
- Serve the chicken spirals with your favorite dipping sauce. Some good options include salsa, guacamole, or sour cream.
- For the mango salsa, use ripe mangoes. This will give the salsa the best flavor.
- If you don't have fresh cilantro, you can use dried cilantro, but you'll need to use less of it since it's more concentrated.
- Serve the mango salsa immediately or store it in the refrigerator for up to 3 days.
Conclusion:
Basil Chicken Spirals with Mango Salsa is a delicious and easy-to-make dish that is perfect for any occasion. The chicken is tender and juicy, and the mango salsa is refreshing and flavorful. This dish is sure to be a hit with your family and friends.
