FRIED BASS

Fried Bass image

I made this while camping. It was a break at camp when nobody was there, so I picked up some worms at the trading post and went off to fish down at the lake. I caught 12 bass with the help of my dad, who came down there after he played guitar at the trading post. It was 7:00 when I brought them all back to camp and thought to eat them since everyone already ate dinner while I was gone. So I fried them up in some crushed chips leftover from lunch. Yum, yum, yum.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 8

1 cup mayonnaise
1/2 cup finely chopped fresh cilantro, plus more for serving
1 clove garlic, grated
Zest and juice of 1 lime, plus lime wedges, for serving
Kosher salt and freshly cracked black pepper
Four 6-ounce striped bass fillets, skin on
3 tablespoons unsalted butter
Juice of 1 lemon

Steps:

  • Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Make the aioli: In a mixing bowl whisk together the mayo, cilantro, garlic, lime zest and juice. Season with salt and pepper and set aside. (If serving the fish later in the day, let the aioli chill in the refrigerator until ready to serve.)
  • Pat the fish dry with paper towels, then sprinkle with salt. Brush a cast-iron pan with 1/2 tablespoon butter. Place the fish, skin-side down, in the pan and place the pan on the direct heat side of the grill. Cook until the skin is crisp and has released from the pan, 3 to 4 minutes. Flip the fish and add the remaining 2 1/2 tablespoons butter. Move the pan to the indirect heat side of the grill. Let the butter melt and lightly brown, then baste the fish for 1 to 2 minutes. Add the lemon juice and continue basting for another minute. Close the lid of the grill and cook until the fish is cooked through, about 3 more minutes. Remove from the grill and spoon the remaining brown butter in the pan over the fish. Serve with the aioli, cilantro and lime wedges.

Tips:

  • Choose the right bass: When selecting bass for your dinner, look for fish that are firm to the touch and have clear eyes. Avoid fish that have a slimy or dull appearance.
  • Prepare your bass properly: Before cooking, remove the scales and guts from the bass. You can do this by using a sharp knife to make a cut along the belly of the fish and then pulling out the entrails. Rinse the fish thoroughly inside and out.
  • Use fresh ingredients: The quality of your ingredients will greatly affect the taste of your dish. Use fresh herbs, vegetables, and spices to create a flavorful and delicious meal.
  • Don't overcook the bass: Bass is a delicate fish that can easily be overcooked. Cook it just until it is opaque and flakes easily with a fork.
  • Serve your bass with a variety of sides: Bass can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or rice. You can also add a sauce or marinade to the fish for extra flavor.

Conclusion:

Bass is a versatile fish that can be cooked in a variety of ways. Whether you are pan-frying, baking, or grilling, there is a bass recipe out there for everyone. With its mild flavor and flaky texture, bass is a great choice for a healthy and delicious meal. So next time you are looking for a new dinner idea, give bass a try.
