Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

Time 35m

Yield 8 serving(s)

Number Of Ingredients 10

1 tablespoon oil
3/4 cup diced andouille sausages or 3/4 cup kielbasa
1 cup chopped onion
1 cup diced red pepper
1/2 cup diced celery
1/4 teaspoon dried cajun seasoning
1 (14 1/2 ounce) can chicken broth
1/2 cup water
1 cup uncooked long-grain rice
1 (15 1/4 ounce) can dark red kidney beans, drained and rinsed

Steps:

  • Heal oil in a medium-sized pot over medium-high heat. Add sausage, onion, red pepper, celery and seasoning; cook, stirring occasionally, until browned, about 5 minutes.
  • Add broth and 1/2 cup water. Bring to a boil and stir in rice. Reduce heat to medium-low; cover and cook until rice is tender, about 15 minutes. Stir in beans; cook, uncovered, until heated through, about 2-3 minutes.

Tips:

  • Prep the Ingredients: Before starting, wash and sort the beans, dice the vegetables, and measure out the spices and liquids. This will ensure a smooth cooking process.
  • Use Quality Ingredients: Opt for fresh vegetables and high-quality beans. Fresh ingredients not only elevate the flavor of the dish but also provide essential nutrients.
  • Season to Taste: While the recipe provides a starting point for seasoning, adjust it to your preference. Taste the beans and rice as you cook and add more spices or salt as needed.
  • Cook the Beans Properly: Soaking the beans overnight or for at least 8 hours is crucial. This reduces cooking time and makes the beans more digestible. Be sure to drain and rinse the beans before cooking.
  • Simmer for Flavor: Simmering the beans and rice together allows the flavors to meld and develop fully. Resist the urge to rush the process; low and slow cooking yields the best results.
  • Add Vegetables at the Right Time: Stagger the addition of vegetables to ensure they retain their texture and flavor. Add heartier vegetables like carrots and celery early on, and more delicate ones like tomatoes and bell peppers towards the end of cooking.
  • Garnish for Presentation: Before serving, consider garnishing the dish with fresh herbs like parsley, cilantro, or green onions. This adds a pop of color and enhances the overall presentation.
