3 tablespoons apple cider vinegar
2 tablespoons mayonnaise
2 tablespoons olive oil

1 tablespoon ancho chile powder
2 teaspoons paprika
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dry mustard powder

Canola oil, for brushing
1 1/2 pounds ground chuck (80 percent lean)
Kosher salt and freshly ground black pepper
4 brioche buns, split
8 slices white American cheese
1/2 cup store-bought BBQ sauce, such as Spicy Bone-Suckin' Sauce, or homemade
Sliced pickled jalapenos, for serving

Steps:

  • Heat a gas or charcoal grill to high. Brush the grill grates with oil.
  • For the coleslaw: Combine the carrot, cabbage, onion, vinegar, mayonnaise, oil and sugar in a large bowl. Season with salt and pepper to taste. Let the slaw sit at least 15 minutes before serving.
  • For the spice rub: Whisk together the ancho chile powder, paprika, coriander, cumin, mustard powder, oregano, cayenne and 1 teaspoon each salt and pepper in a small bowl.
  • For the burgers: Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 3/4 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper. Sprinkle the spice rub on one side of the burgers then brush with oil. Grill, spice rub-side down first, covered, until golden brown and slightly charred, about 4 minutes per side for medium.
  • While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
  • Add 2 slices of cheese to the tops of each burger. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
  • Place the burgers on the bottom buns and spoon about 2 tablespoons of the BBQ sauce on each. Top with the sliced pickled jalapenos, some of the coleslaw and the top buns and serve immediately.

8 slices bacon

4 pineapple rounds, cored

4 hamburger rolls
4 pieces lettuce

Steps:

  • Preheat the grill to 375°F (190°C).
  • In a large bowl, season the ground beef with salt and pepper. Add the barbecue sauce and mix with your hands until well incorporated.
  • Divide the meat into 4 baseball-sized portions. Roll into balls and place on a baking sheet.
  • Using a clean, empty soda or beer can, press into the center of a beef ball to form a crater, shaping the beef up around the sides of the can. Smooth out any cracks in the meat. Steps:

  • Heat a large cast-iron skillet over medium-high heat for 20 minutes.
  • Gently mix the chuck and sirloin together in a large bowl, making sure not to overwork the mixture.
  • Combine the paprika, brown sugar, cayenne, coriander, cumin, garlic powder, mustard powder and onion powder in a small bowl. Sprinkle the spice mixture over the beef along with the Worcestershire sauce and fold gently to combine. Form the beef into 4 3/4-inch-thick patties, each about 4-inches in diameter. Oh, the smash burger. In my opinion, it's the best style of burger out there. A thinly charred burger with shaved onions pressed into it, two slices of the best cheese and sauce dripping down your hands - come on! If paper towels could be listed on the ingredient list, it would be at the top. Some Oklahoma onion burger purists skip toppings altogether, but I'm taking the history of this burger and expanding on it with a BBQ smoky slaw to add creamy, vinegary flavors and a crunchy texture that's pure bliss.

1/2 cup barbecue sauce
1/2 cup mayonnaise
12 pickled pepperoncini peppers, plus 2 tablespoons liquid from the jar
1 tablespoon Dijon mustard
1 tablespoon smoked paprika
1 tablespoon white wine vinegar
Kosher salt and freshly ground black pepper
One 14-ounce bag coleslaw mix
1 pound 80/20 ground beef
8 slices American cheese
1 cup Vidalia onions, thinly sliced on a mandoline
16 dill pickle chips
4 soft potato rolls, split, such as Martin's
Canola oil, for the griddle or skillet

Steps:

  • Preheat a griddle, large griddle pan or large cast-iron skillet over medium heat for at least 10 minutes.
  • Whisk together the barbecue sauce, mayonnaise, 2 tablespoons pepperoncini liquid, mustard, smoked paprika and vinegar in a small bowl. Season with salt and pepper.
  • Roughly chop the pepperoncini peppers and toss together with the coleslaw mix in a large bowl. Add three-quarters of the sauce and toss. Reserve the remaining sauce for the bun and burger.
  • Loosely form the ground beef into 4 balls. Season with salt and pepper on all sides.
  • Brush the griddle with canola oil and add 1 ball of beef griddle. Add 1/4 cup of the shaved onions on top of the ball and smash it down with a heavy metal spatula. You want to smash and spread the meatball, making sure those onions are pushed into the beef, and creating a patty that will be bigger than your bun. Cook until browned, about 2 minutes. Flip and cook until the onions are steamed and caramelized, about 2 minutes. For this burger, it's OK to give it another press with your spatula-we want that Maillard reaction (see Cook's Note). Top the burger with 1 tablespoon of the remaining mayonnaise mixture, then 2 slices of cheese and cook until melted, 1 minute. Repeat with the remaining beef, cooking in 2 batches.
  • Meanwhile, spread the mayonnaise mixture on the bottom of the buns and cover with 4 dill pickle chips.
  • Once the cheese has melted, place each burger on a bottom bun and top with 1/4 cup of the slaw mixture. Smash each top bun on the slaw and enjoy! Your friends will thank you.

1 cup buttermilk
1 egg
1/3 cup Progresso™ panko crispy bread crumbs
1/3 cup Progresso™ plain bread crumbs
1/3 Corn Chex™ cereal, crushed
1/2 teaspoon salt
1/2 teaspoon pepper
1 lb lean (at least 80%) ground beef
1 small onion, chopped (1/4 cup)
1 box Hamburger Helper™ sloppy joe
1 2/3 cups milk
1 1/3 cups hot water
1/4 cup barbecue sauce
1/2 cup frozen corn (from 12-oz bag)
6 to 8 hamburger buns, split

Steps:

  • Place onion rings in medium bowl; pour buttermilk over onions. Let soak 30 minutes.
  • Heat oven to 400°F. Spray cookie sheet with cooking spray. In shallow bowl, beat egg. In another bowl, mix both bread crumbs, the cereal, salt and pepper.
  • Drain onion rings, discarding buttermilk. Dip onion rings in egg, then coat with crumb mixture. Place on cookie sheet. Bake 10 to 13 minutes or until browned.

8 slices peppered bacon (for BURGERS)

Steps:

  • 1. Combine coffee rub seasoning mix ingredients in a small bowl and mix together with a fork. Set aside
  • 2. Melt butter over MED heat in a saucepan. Add onion and garlic and saute until soft and translucent, about 8-10 minutes.
  • 3. Add remaining sauce ingredients, stir to combine. Bring to a low boil, reduce heat and simmer for 20 minutes, until sauce has thickened.
  • 4. Pour sauce into blender or food processor and puree. Set aside to cool.
  • 5. To a mixing bowl, add ground beef, salt, pepper and 2 Tbsp cooled bbq sauce. Mix well with your hands. Divide into 4 equal sections. Each burger will be 1/2 pound.
  • 6. Rub coffee rub seasoning mix over both sides of each burger.
  • 7. Heat a large skillet over MED-HIGH heat, add a small pat of butter and toast the pretzel buns (sliced side down). Remove from pan to cool.
  • 8. Add 1 Tbsp butter to skillet and add burgers. Cook for about 4-5 minutes per side, until burger is cooked to desired doneness.

1 lb ground beef (12% or leaner)
1/4 cup breadcrumbs
2 tablespoons barbecue sauce
2 teaspoons minced onions
1/2 teaspoon garlic powder
salt (to taste)
pepper (to taste)
4 tablespoons shredded cheese (I use cheddar or jack)

Steps:

  • Use your hands to mix Ground Beef, Sauce, Onion, Garlic, Salt & Pepper.
  • Slowly mix in Bread Crumbs until it gets thick, but not so much that they are really noticeable.
  • Separate into four equal parts.
  • Roll into large balls then gently flatten. Do not press, pound, or smash.
  • Grill until you reach desired temperature. (I use a George Forman Grill).
  • Take off the grill and top with shredded cheese.

1/2 cup minced onion
1/2 cup chopped and seeded plum tomato
1 teaspoon minced jalapeno chiles, more if you like or 1 teaspoon serrano pepper
1 clove garlic, minced
1 teaspoon chili powder
1 (15 ounce) can kidney beans, rinsed,well drained
1/4 cup dry breadcrumbs
2 tablespoons barbecue sauce (I like homemade or Uncle Dougie's, a brand out of Barrington, IL)
1 egg white, beaten
4 whole grain buns, toasted
4 slices cheddar cheese
4 leaves lettuce
4 slices thick tomatoes
avocado, slices
barbecue sauce (Whatever else floats your boat ... sour cream?)

Steps:

  • Heat oil in nonstick skillet over medium heat.
  • Add next onion, plum tomato, jalapeno, garlic and chili powder; sauté 5 minutes.
  • Cool slightly.
  • Using fork, coarsely mash beans in bowl.
  • Combine with onion mixture, breadcrumbs, 2 tablespoons of the barbecue sauce and egg white.
  • Shape mixture into four 1/2-inch-thick patties.
  • (Can be prepared 4 hours ahead. Cover and chill.) It will look as though these little burgers will just fall apart and turn to mush, but they stay together really well once they"hit the pan"!
  • If grilling, oil the rack or spray grill rack with nonstick spray, then fire up coals to medium heat.
  • If pan-frying, heat a little olive oil over medium heat.
  • Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place burgers on buns.
  • Serve with more barbecue sauce, and cheese, tomato, lettuce, avocado, or whatever topping you like!

1 1/2 italian sweet onions
2 tsp. balsamic vinegar
2 tsp. extra virgin olive oil

4 ground beef patties, 1/3 lb. each
4 slices monterey jack cheese
4 large leaves and 4 medium leaves iceberg lettuce
2/3 cup of your favorite barbecue dressing

Steps:

  • 1. Peel onions and cit into four 1/2 inch thick horizontal slices. Drizzle each slice with 1/2 tsp. balsamic vinegar and 1/2 tsp. olive oil; season to taste with salt.
  • 2. Grill or pan fry burgers and onions for about 3 minutes per side or til cooked to taste. Top each burger with 1 slice cheese and cook just til cheese melts.
  • 3. To serve, put each burger on a large lettuce leaf. Add 1 slice onion and barbecue dressing to taste. Top with a smaller lettuce leaf. Bring bottom leaf up and around burger to enclose. Makes 4 servings.
  • 4. You can substitute large portabello mushrooms for the ground beef patties. Omit the barbecue dressing. instead, drizzle top and bottom of mushrooms with balsamic vinegar, olive oil and soy sauce. Grill or pan fry, then top with onion and wrap in lettuce.

1 tablespoon butter
1 small red onion (1/2 finely chopped, half thinly sliced)
2 garlic cloves (finely chopped)

1 teaspoon sugar

1 1/4 lbs ground chicken
1 tablespoon grill seasoning
3 tablespoons extra-virgin olive oil (divided)
2 tablespoons honey
1 lemon (juiced)
3 tablespoons sweet pickle relish
2 cups shredded cabbage mix

4 Kaiser rolls (or hamburger buns)

Steps:

  • Melt butter in a small skillet over medium heat. Add chopped red onion, garlic, and tomato paste. Cook for 5 minutes to soften and sweeten. Sprinkle the sugar into the pan and remove from heat.
