3 pounds skinless, boneless chicken breast halves
6 potatoes, cut into bite-sized chunks
1 onion, chopped
½ cup ketchup
6 tablespoons brown sugar
¼ cup Worcestershire sauce
¼ cup white vinegar
¼ cup margarine
2 tablespoons lemon juice
2 teaspoons dry mustard
2 teaspoons salt
2 teaspoons paprika
2 teaspoons chili powder
1 pinch red pepper flakes

1/4 cup Worcestershire sauce

  • Scrub the outside of each potato and remove any blemishes.
  • Poke the outside of each sweet potato multiple times with a fork then place on a baking sheet and place on the middle oven rack.

This recipe was made up on the spot using leftover grilled chicken, leftover grilled corn on the cob, leftover baked potatoes, a can of Rotel tomatoes, a can of beans (I used black beans, but white, kidney, and pinto beans would work equally well). I was able to make it in one cast iron skillet also so clean up was a snap

1 grilled ear of corn
1 onion
2 celery ribs
12 ounces Rotel Tomatoes
12 ounces black beans
