  • In a small saucepan, combine chicken, barbecue sauce and cilantro; heat through over medium heat, stirring occasionally., In a large skillet, heat 1 tablespoon oil over medium-high heat. Salt and freshly ground black pepper
2 teaspoons poultry seasoning
2 teaspoons grill seasoning
3 tablespoons extra-virgin olive oil
4 thick cut slices pancetta or bacon, chopped
1 medium red onion, chopped
2 cloves garlic, grated or finely chopped
1 to 2 sprigs fresh rosemary, finely chopped
1/4 cup balsamic vinegar
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 cup tomato sauce
2 1/2 cups chicken stock
1 1/2 cups milk
1 cup quick cooking polenta
2 tablespoons butter
1/2 cup grated Parmiginao-Reggiano
Torn fresh basil leaves

Steps:

  • Preheat oven to 400 degrees F.
  • Season the chicken liberally with salt and pepper, poultry seasoning, and grill seasoning. Heat 2 tablespoons olive oil in a medium skillet and brown the chicken a few minutes on each side to put some of it's flavor and drippings into the pan then transfer to oven and roast 15 minutes more or until juices run clear. Meanwhile, add 1 more tablespoon olive oil to the pan and cook pancetta or bacon, if using, until crisp. Add onions, garlic and rosemary, cook 5 minutes then add the vinegar, sugar, Worcestershire, tomato sauce and 1/2 cup chicken stock, reduce heat to low and let sauce simmer 5 minutes more.
  • Bring remaining 1 1/2 cups stock and milk to a boil, whisk in polenta and season with salt and pepper. Whisk polenta 2 to 3 minutes until it thickens, stir in butter and cheese, remove from heat.
  • Remove chicken from oven and turn in barbecue sauce. Fill shallow bowls with polenta Top with chicken, spoon extra sauce over chicken and garnish with some torn basil leaves.

Basic firm polenta (see recipe), cut into 8 squares
Olive oil
1 onion, finely diced (about 1 cup)
3 garlic cloves, minced
Salt and pepper
3 cups canned diced tomatoes, with juice
1 bay leaf
1 tablespoon roughly chopped capers
1/4 cup roughly chopped pitted black olives
4 anchovy fillets, rinsed and chopped
1/2 teaspoon red pepper flakes
Large eggs, for frying

Steps:

  • Paint tops of polenta squares lightly with olive oil. Heat a stovetop grill or cast-iron griddle. Lay polenta top-side down and cook until nicely browned and crisp, about 10 minutes. Flip and brown the other side. Keep warm.
  • For the sauce, heat 2 tablespoons olive oil in a heavy saucepan. Add onion and cook over medium heat until softened, about 5 minutes. Add garlic, season with salt and pepper, and cook for 1 minute more. Add tomatoes and bay leaf and simmer briskly for 5 to 8 minutes, until thickened slightly. Add capers, olives and anchovies and cook for 2 minutes more. Season with red pepper flakes and a little more salt if necessary.
  • On each plate, put 1 square of warm polenta and spoon sauce around it. For each diner, fry 1 or 2 eggs sunny-side up in olive oil, and place on top of sauce. Serve immediately.

3 pounds skinless, boneless chicken breast halves - cut into strips
3 eggs
1 cup water
½ cup milk
2 tablespoons salt
2 tablespoons black pepper
6 cups all-purpose flour
¼ cup salt

2 tablespoons dry mesquite flavored seasoning mix
4 cups oil for frying, or as needed
1 teaspoon butter
1 (12 ounce) bottle barbecue sauce

Steps:

  • In a large bowl, whisk together the eggs, water, milk, 2 tablespoons salt, and 2 tablespoons pepper with a fork until smooth. In another large bowl, stir together the flour, 1/4 cup salt, 5 teaspoons pepper, garlic, and mesquite seasoning.
  • Fill a large heavy skillet or wok halfway full with oil. Heat to 365 degrees F (180 degrees C). Use a fork to pick up one chicken strip at a time, and dip it into the egg mixture, then into the flour mixture, back into the egg mixture, and into the flour mixture again. Place coated strips into the hot oil to fry. Do not over crowd, just cook in batches. Once chicken is browned on one side, flip over, and brown on the other side.
  • Preheat the oven to 300 degrees F (150 degrees C). Butter one 12x20 inch glass baking dish, or two 9x13 inch baking dishes. Pour enough barbeque sauce into the dish to coat the bottom. Arrange fried chicken strips in rows in the prepared dish. Pour remaining sauce over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the sauce is caramelized onto the chicken.

4 cups (1 quart) Chicken Stock, heated, recipe follows
2 cups polenta (recommended: Anson Mills)
2 large tablespoons mascarpone cheese
2 large tablespoons freshly grated Parmesan cheese, plus peeled ribbons, for garnish
Unsalted butter, as needed
About 1 cup chanterelles, brushed, trimmed and quartered (or at least cut to the same size)
Salt
1/2 shallot, thinly sliced
1 clove garlic, thinly sliced
1/2 bunch fresh thyme
2 eggs, cracked into individual ramekins
Freshly picked flat-leaf parsley, for garnish
Shaved truffle, for garnish
Sea salt and freshly ground black pepper
Extra-virgin olive oil, to drizzle
2 pounds chicken backs and necks
2 pounds chicken feet or additional backs and necks
1 onion, quartered
1 carrot, thinly sliced
1 head garlic, halved crosswise
4 sprigs fresh thyme
1 tablespoon kosher salt
1 tablespoon black peppercorns
1 bay leaf
1 gallon water

Steps:

  • Add about 1-inch water to a medium saucepot over medium heat and bring to a simmer. Add the polenta to the chicken stock and stir to combine.
  • Place into a bowl and place over the simmering water to act as a double boiler. Once it starts to get soft, after about 5 minutes, add the mascarpone, 2 large tablespoons Parmesan cheese and 2 large tablespoons butter. Stir to combine and allow to slowly cook for about 40 to 50 minutes, stirring occasionally. If the polenta starts to become too hard, add more liquid, chicken stock or water, as needed.
  • Place a saute pan over medium heat and add 1 large tablespoon butter. Add the chanterelles and evenly space them in the pan to not overcrowd. Season the mushrooms with salt, to taste. Add the shallots, garlic and 6 to 8 sprigs thyme and allow the mushrooms to caramelize.
  • Place another medium saute pan over medium heat and add 1 heaping tablespoon unsalted butter and melt, not letting the butter foam or burn. Gently add the egg to the melted butter, season with salt and slowly cook, about 2 minutes. Repeat with second egg.
  • Place a spoonful of polenta in the middle of each dish. Top with an egg, surround with caramelized mushrooms, parsley leaves, shaved Parmesan, and shaved truffle, to taste. Season with sea salt, freshly ground black pepper and a drizzle of extra-virgin olive oil.
  • Rinse the chicken parts thoroughly. In a 10-quart stockpot, combine the onion, carrot, garlic, thyme, salt, bay leaf, peppercorns, and 1 gallon cold water. Bring the liquid to a boil over high heat, skimming any foam and impurities that rise to the surface. Reduce the heat to low and simmer for 5 hours, skimming the surface as necessary. Strain through a fine-mesh strainer, discarding the solids.

  • For chicken:
  • Whisk onions, mustard, lemon juice, and garlic in medium bowl to blend. Using fingertips and leaving 1 side still attached, loosen skin on each chicken thigh. Lift skin flap on each and fold back. Spoon half of mustard seasoning atop thighs, dividing equally; spread to cover meat. Fold skin flap over to enclose seasoning and secure skin with metal pin. Sprinkle thighs with salt and pepper on both sides. Turn thighs, skin side up, and spread remaining mustard seasoning over skin. Transfer to small baking sheet. DO AHEAD: Chicken can be prepared 6 hours ahead. Cover and refrigerate.
  • Prepare barbecue (medium-high heat). Preheat oven to 250°F. Reduce heat to medium-low; simmer until polenta is tender, thick, and creamy, whisking often and adjusting heat to maintain gentle simmer, 25 to 30 minutes. Add corn kernels and cook, stirring constantly, until corn is tender, about 5 minutes. Mix in mascarpone cheese. Season polenta to taste with salt and pepper.
  • Spoon polenta onto each of 6 plates. Top with grilled chicken and serve.

1/4 cup soy sauce
1/4 cup honey
1/2 tablespoon ground cinnamon

Steps:
