Steps:

  • Preheat oven to 350 degrees
  • Brown ground beef over medium heat and drain excess grease

1 bunch scallions, ends trimmed
1/2 cup salsa
2 limes, juiced
1/2 bunch cilantro
2 teaspoons chili powder
2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper, or more to taste
Kosher salt
Twelve 6-inch corn tortillas
1 1/2 cups shredded Cheddar or Jack cheese
Vegetable oil, for pan frying
4 scallions, thinly sliced
Sour cream and salsa, for serving
