This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

3 (15 ounce) cans black beans, drained and rinsed
1 sleeve buttery round crackers (such as Ritz®), crushed
1 cup shredded Cheddar cheese
1 cup diced multi-colored bell peppers
⅔ cup frozen corn kernels
½ cup diced onion, or to taste
24 slices jalapeno pepper, diced
1 egg white
1 (1 ounce) packet hot taco seasoning mix
1 (1 ounce) package spicy Ranch-style seasoning mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.
  • Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeno pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.
  • Bake in the preheated oven until cooked through, 45 to 60 minutes.

2 eggs, lightly beaten
1-1/2 cups ketchup, divided
1 can (16 ounces) kidney beans, rinsed, drained and mashed
1 cup seasoned bread crumbs
1 large onion, chopped
1 celery rib, chopped
2 teaspoons Worcestershire sauce
1 teaspoon salt-free lemon-pepper seasoning
1/2 teaspoon seasoned salt
2-1/2 pounds lean ground beef (90% lean)
1/2 cup water

Steps:

  • In a large bowl, combine the eggs, 1 cup ketchup, beans, bread crumbs, onion, celery, Worcestershire sauce, lemon-pepper and seasoned salt; crumble beef over mixture and mix well. , Shape into two loaves. Place in a 13x9-in. baking dish coated with cooking spray., In a bowl, combine water and remaining ketchup; pour over meat loaves. 1½ pounds ground beef
2 eggs
1 onion (diced)
¼ cup ketchup
salt and pepper (to taste)
1 cup quick oats
½ cup Italian breadcrumbs
10.75 ounce tomato soup (divided, 1 can)
2 Tablespoons Worcestershire sauce
2 Tablespoons brown sugar
1 Tablespoon olive oil
1 pound fresh green beans
non stick cooking spray

Steps:

  • Preheat oven to 400 degrees F.
  • In a large mixing bowl, combine ground beef, eggs, onion, ketchup, salt and pepper, oats, bread crumbs, and half the can of soup.
  • Spray a baking sheet with nonstick cooking spray.
  • Form meatloaf mixture into 12 patties and place on baking sheet.
  • In a small mixing bowl, whisk together remaining soup, Worcestershire sauce and brown sugar.
  • Spoon some of the soup mixture on top of each meatloaf patty.

High in fiber and protein, low in fat, easy and really yummy! I've always thought meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!

2 cups water
1 teaspoon salt
1 cup lentils
1 small onion, diced
1 cup quick-cooking oats
3/4 cup monterey jack cheese or 3/4 cup American cheese
1 egg, beaten
4 1/2 ounces spaghetti sauce or 4 1/2 ounces tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper

Steps:

  • Add salt to water and boil in a saucepan.
  • Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
  • Remove from fire.
  • Drain and partially mash lentils.
  • Scrape into mixing bowl and allow to cool slightly.
  • Stir in onion, oats and cheese until mixed.
  • Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.
  • Mix well.
  • Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
  • Smooth top with back of spoon.
  • Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.
  • Cool in pan on rack for about 10 minutes.
  • Run a sharp knife around edges of pan then turn out loaf onto serving platter.

1 (16 ounce) can vegetarian baked beans
1 1/4 cups breadcrumbs
1 chopped onion
2 egg whites
