Yield 6

Number Of Ingredients 12

4 cups cooked pinto beans
1 quart low-sodium tomato juice
4 tablespoons lime juice
2 teaspoons reduced-sodium Worcestershire sauce
1 16-ounce can stewed, no-salt-added tomatoes
2 cups cucumber, peeled, seeded and chopped
1 cup celery, thinly sliced
1 cup onion, chopped
1 cup green pepper, chopped
2 teaspoons roasted garlic, minced
½ small avocado, peeled and chopped
Croutons

Steps:

  • Process beans, tomato juice, lime juice and Worcestershire sauce in a food processor or blender. Pour the mixture into a large bowl. Mix in the remaining ingredients except the avocado and croutons. Refrigerate until chilled - about four hours. Pour into bowls and add avocado and croutons. Serve with crusty multigrain bread or rolls.

Tips:

  • To enhance the flavor of your gazpacho, use ripe, fresh tomatoes. Additionally, opt for high-quality olive oil and red wine vinegar.
  • If you want a smoother gazpacho, strain it using a fine-mesh sieve before serving. You can also adjust the thickness by adding more or less water.
  • To make the gazpacho even more refreshing, chill it in the refrigerator for at least 30 minutes before serving.
  • Serve the gazpacho with a variety of garnishes, such as chopped cucumber, red onion, croutons, or a drizzle of olive oil. You can also add a dollop of Greek yogurt or sour cream for extra richness.
  • If you're short on time, you can use canned or diced tomatoes instead of fresh ones. Just be sure to drain them well before adding them to the soup.

Conclusion:

If you're looking for a delicious, refreshing, and healthy soup, bean gazpacho is a great option. It's easy to make, and it's packed with flavor. Plus, it's a great way to use up leftover beans. So next time you're in the mood for a cold soup, give bean gazpacho a try. You won't be disappointed.
