1 (16 ounce) package hot dogs , cut into 1/4-inch slices
1 (28 ounce) can baked beans with pork
⅔ cup ketchup
2 tablespoons cider vinegar
¼ cup Worcestershire sauce
1 ½ teaspoons garlic powder
1 tablespoon chopped fresh parsley

Steps:

  • In a large skillet, combine the hot dogs, baked beans, ketchup, cider vinegar, Worcestershire sauce, garlic powder and parsley. Mix to blend, and bring to a boil. Turn heat to low, cover, and simmer for 25 to 30 minutes, stirring occasionally.

1 (28 ounce) can baked beans
6 -8 hot dogs
4 cups tater tots
1 cup sharp cheddar cheese, shredded

Steps:

  • Set your oven to 450 degrees Fahrenheit.
  • Dump can of baked beans (we use Bush's vegetarian) into a casserole dish. (We use a medium sized glass bowlish looking thing).
  • Set the dish aside.
  • Cut up hotdogs into bite sized pieces; add to casserole dish, and mix until dogs are well coated with baked bean sauce.
  • Cover the bean and dog mixture with tater tots. We usually use a couple handfuls; use as many as you'd like. Just make sure to cover the mixture completely.
  • Place the casserole dish in the oven for 1/2 an hour or until tater tots are golden brown.
  • When Redneck Casserole is all done, turn off the oven and sprinkle the top with cheese.
  • Redneck Casserole is completely done when cheese is melted and you just can't take it anymore; dig in!
  • (You can mix pretty much anything with this dish; sour cream, ketchup, mustard, hot sauce, etc.).

1 (8 count) package hot dogs
2 (16 ounce) cans pork & beans
1/4 cup brown sugar
1 tablespoon yellow mustard
1 tablespoon ketchup
1/2 diced onion

  • Slice hot dog in bite-sized pieces. Add rest of ingredients to a greased 2 quart casserole dish, mix well.

4 12-ounce cans kidney, black, pinto or great Northern beans, or a combination, drained reserve the liquid and rinsed
6 medium tomatoes, cored, peeled and sliced
2 red peppers, seeded and diced
1 green pepper, seeded and diced
1 yellow onion, diced
8 cloves of garlic, chopped
1 large bunch of cilantro or oregano or a combination, chopped
1 teaspoon kosher or sea salt
Cumin
chili powder
3 tablespoon balsamic vinegar
olive oil
1 cup low-sodium shredded cheddar cheese
1 bunch of scallion

Steps:

  • Season tomato slices with olive oil, cumin, chili powder and salt. Roast in a 350-degree oven until slightly caramelized. Chop roughly.
  • Preheat a 10-inch sauté pan. Add some olive oil, the garlic, onions, peppers and the tomato. Cook until soft. Add more of the dry seasonings if necessary. Add the vinegar and remove from heat.
  • Combine the vegetables with the beans and mix well. Add herbs. If mixture seems dry, add some reserved liquid from the beans.
  • Place in a casserole dish, cover and bake at 325 degrees for 20 to 30 minutes.
  • Uncover, sprinkle with cheese and return to oven to melt the cheese.

3 cans pork and beans, drained
1/2 cup bottled BBQ sauce
2 T brown sugar
1 pkg corn bread mix (like Jiffy)
1/4 cup milk
1 egg

Steps:

  • Heat oven to 350. Coat 13 x 9 x 2 inch baking dish with nonstick cooking spray. Heat a large nonstick skillet over medium-high heat and cook hot dogs until nicely browned, about 3 minutes per side. Remove from pan and cut into 1/2 inch pieces on the bias. In a large bowl, mix hot dogs, beans, BBQ sauce, and brown sugar. Spoon into the baking dish. Prepare corn bread per package directions and spread evenly over top of casserole.
