8 ounces mild Italian sausage, casings removed
1/2 medium red onion, halved and sliced 1/4 inch thick
1 cup jarred pizza sauce
3 cloves garlic, grated
2 sprigs thyme, leaves only
1 long loaf French bread or baguette (about 22 inches long), halved crosswise and cut horizontally
2 cups shredded mozzarella
1/2 green bell pepper, sliced into 1/4-inch-thick strips
1/2 red bell pepper, sliced into 1/4-inch-thick strips
2 tablespoons grated Parmesan
Crushed red pepper flakes and granulated garlic, for serving

Steps:

  • Preheat the oven to 375 degrees F with one rack positioned at the bottom of the oven and another at the top.
  • Cook the sausage in a medium skillet over medium-high heat, breaking up any clumps with a wooden spoon, until some of the fat has rendered and the sausage is brown, 6 to 8 minutes. Add the onions and cook, stirring occasionally, until slightly softened, about 2 minutes.
  • Meanwhile, add the pizza sauce, garlic and thyme to a small saucepan. Heat over medium heat to let the flavors infuse while the sausage and onions cook.

1 jar prepared pesto, optional
Five 8-ounce packages fresh mozzarella, sliced
5 ounces Canadian bacon slices, halved
8 ounces canned pineapple chunks
5 tablespoons olive oil
Salt and freshly ground black pepper
One 12-ounce jar Kalamata olives, chopped
8 ounces crumbled feta
4 ripe tomatoes, diced rough
1/2 English cucumber, seeded and diced
1/2 bunch fresh parsley, chopped
1 cup sliced pepperoni
6 to 7 jalapenos, sliced
Sliced Roma tomatoes, for topping
2 tablespoons olive oil
Salt and freshly ground black pepper
1/2 bunch fresh basil
Olive oil, for sauteing
1 pound ground beef
1 teaspoon red pepper flakes

Steps:

  • For the pizza base: Preheat the oven to 375 degrees F.

1/4 cup grated Parmesan cheese
2 tablespoons coarsely chopped or torn fresh basil leaves

  • Heat the oven to 425ºF. Arrange a rack in the top third of the oven and heat the oven to 425°F.

4 medium sweet onions, thinly sliced with the grain
1 ¼ teaspoons kosher salt
2 tablespoons all-purpose flour
2 tablespoons sherry wine
1 cup low sodium beef broth
3 sprigs fresh thyme, leaves only
1 dried bay leaf
½ teaspoon freshly ground black pepper, plus more to taste
1 loaf french bread, cut in half
1 tablespoon olive oil
6 oz shredded fontina cheese
6 oz shredded gruyère cheese
14 oz salami, thinly sliced
2 sprigs fresh parsley, tough stems trimmed

Steps:

  • In a large, heavy-bottomed pot, melt the butter over medium heat. Add the onions and season with the salt. Cook for about 1 hour and 45 minutes, stirring occasionally, until golden brown. Around the last 20 minutes of cooking, the onions will begin to caramelize, so watch carefully to ensure they don't burn. Remove 3 tablespoons of onions from the pot and set aside.
