Time 1h40m

Yield 4 to 6 servings

Number Of Ingredients 20

1 tablespoon canola oil
1 small yellow onion, chopped
2 chipotles in adobo, finely chopped
2 garlic cloves, minced
1 tablespoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
One 10-ounce can diced tomatoes and green chiles
1 cup chicken stock
1 rotisserie chicken, shredded
Charred corn tortillas, for serving
Cotija cheese
Fresh cilantro leaves
Pickled Shallots and Red Onions (recipe follows)
Salsa
1/2 cup distilled white vinegar
2 tablespoons sugar
Kosher salt
1 small red onion, thinly sliced
1 shallot, thinly sliced

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onions and saute until they begin to soften, about 3 minutes. Add the chipotles, garlic, cumin, salt and cayenne and saute until fragrant, about 1 minute. Stir in the tomatoes and stock and cook until they begin to simmer, about 2 minutes. Turn off the heat and carefully ladle the sauce into a heat-safe blender. Puree until smooth. Pour the sauce back into the pan over medium heat and add the chicken, stirring to incorporate the chicken into the sauce. Cook until the sauce has thickened, about 5 minutes. Serve with tortillas and desired toppings.
  • Combine the white vinegar, sugar and 1 teaspoon salt in a small saucepan with 1/2 cup water. Bring to a simmer over medium-high heat. Add the onions and shallots to a pint jar and pour the liquid over the top. Let cool completely. Refrigerate up to 1 week.

AUTHENTIC SPICY CHICKEN TACOS

Authentic Spicy Chicken Tacos image

While many North Americans think of tacos as having crisp, fried shells, authentic Mexican tacos are made with soft, fresh corn tortillas. The traditional preparation is the smart choice, as unfried corn tortillas are low in fat and made with whole grains. From MSN.

BECKY'S CHICKEN TACOS

Becky's Chicken Tacos image

My favorite chicken taco meat recipe that I got from a coworker. I usually serve these with flour tortillas, cheddar cheese, and some guacamole. Great for a get together, as you can cook before hand and have people assemble their own. I also love to snack on this cold. Can easily be scaled up or down depending on how many people you are serving.

Tips:

  • Use a variety of toppings: The great thing about chicken tacos is that you can top them with just about anything. Some popular options include shredded lettuce, diced tomatoes, sour cream, guacamole, and salsa. You can also get creative and add other toppings like black beans, corn, or pineapple.
  • Make your own taco seasoning: Taco seasoning is easy to make at home and it's much healthier than the store-bought kind. Simply mix together chili powder, cumin, paprika, garlic powder, onion powder, and salt. You can also add other spices like cayenne pepper or oregano to taste.
  • Use fresh tortillas: Fresh tortillas are always the best option for chicken tacos. You can find them in the refrigerated section of most grocery stores. If you can't find fresh tortillas, you can also use corn tortillas that have been warmed up in a skillet.
  • Don't overcook the chicken: Chicken tacos are best when the chicken is cooked through but still juicy. Overcooked chicken will be dry and tough.
  • Serve chicken tacos with your favorite sides: Chicken tacos are a great meal on their own, but they can also be served with a variety of sides. Some popular options include rice, beans, or salad.

Conclusion:

Chicken tacos are a delicious and versatile meal that can be enjoyed by people of all ages. They're perfect for a quick and easy weeknight dinner or for a fun party food. With so many different toppings and sides to choose from, there's sure to be a chicken taco recipe that everyone will love.
