5 tablespoons all-purpose flour, divided
1/2 pound beef top sirloin steak, cut into 1/2-inch cubes
3 teaspoons butter, divided
1 medium onion, chopped
1 celery rib, chopped
1 medium carrot, chopped
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
2 cans (14-1/2 ounces each) reduced-sodium beef broth
1-1/2 cups water, divided
1 teaspoon dried thyme
1/2 teaspoon white pepper
1/4 teaspoon salt
2 cups frozen beef tortellini

Steps:

  • Place 2 tablespoons flour in a large resealable plastic bag. Add beef, a few pieces at a time, and shake to coat. In a nonstick Dutch oven, brown beef in 2 teaspoons butter; remove and keep warm. , In the same pan, saute the onion, celery and carrot in remaining butter until tender. Add garlic; cook 1 minute longer. Add the tomatoes, broth, 1 cup water, thyme, pepper, salt and reserved beef. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add tortellini; cook 5-10 minutes longer or until tender., Combine remaining flour and water until smooth. Stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened.

1/4 cup chopped fresh parsley
1 large egg, lightly beaten
1 clove garlic, grated

2 tablespoons extra-virgin olive oil
2 carrots, diced
2 stalks celery, diced
1 quart low-sodium chicken broth
1 9-ounce package refrigerated cheese tortellini
4 cups loosely packed baby spinach (about 3 ounces)

Steps:

  • Combine the beef, parmesan, 2 tablespoons parsley, the egg, garlic, 1/2 teaspoon salt, and pepper to taste in a medium bowl; mix with your hands until just combined. Form into 1-inch meatballs; set aside.
  • Heat the olive oil in a pot or Dutch oven over medium-high heat. Add the meatballs and cook, turning, until golden, 3 to 4 minutes; remove to a plate. 2 cloves garlic, minced
5 cups beef broth

½ cup dry red wine

8 ounces tomato sauce
1 ½ cups sliced zucchini

1 lb beef round steak, cut in small dice
1 leek, diced (make sure you wash it well, they can be very gritty)
1 celery rib, diced
2 carrots, diced
1 large ripe tomatoes, diced or 1 (8 ounce) can diced tomatoes
1 turnip, diced (You can also use rutabega or some diced cabbage) (optional)
1 garlic clove (optional)
6 cups strong beef stock
1 bay leaf
1 teaspoon dried marjoram
