1 lb flank steak, sliced into strips
¼ cup soy sauce, plus 3 tablespoons, divided
2 tablespoons sesame oil, divided
2 tablespoons minced garlic, divided
1 tablespoon brown sugar
½ cup water
1 tablespoon cornstarch
2 teaspoons oil
½ cup onion
1 cup broccoli floret
3 eggs, beaten
2 cups cooked white rice
pepper, to taste
sliced scallions, for garnish

Steps:

  • Pour ¼ cup soy sauce, 1 tablespoon sesame oil, 1 tablespoon of garlic, the brown sugar, water, and cornstarch over the sliced flank steak. Mix well, then let marinate in the refrigerator for at least 1 hour.
  • In a wok or deep skillet, cook the beef and marinade thoroughly, then set aside.
  • In the same pan, heat the oil over medium heat. Sauté the onion, remaining tablespoon of garlic, and broccoli until the onion is translucent. Push the cooked vegetables to the side of the pan.
  • Beat the eggs and pour into the empty half of the pan. Scramble the eggs and mix with the rest of the vegetables.
  • Add the rice, remaining 3 tablespoons of soy sauce, remaining tablespoon of sesame oil, pepper, and the cooked beef. Mix well and let the rice cook until slightly crispy.
  • Serve garnished with scallions.

2 egg yolks
1/2 cup leftover broccoli from Crispy Orange Beef with Broccoli, recipe follows
1/2 cup bean sprouts
1/2 cup leftover beef, from Crispy Orange Beef with Broccoli
2 cups leftover cooked rice from Crispy Orange Beef with Broccoli
3 tablespoons soy sauce
Freshly ground black pepper
1 scallion, thinly sliced
3 cups white rice
1 1/4 pounds beef chuck steak
1/2 cup canola oil
1/4 cup cornstarch
3/4 cup orange marmalade
1 tablespoon chopped garlic
2 tablespoons white vinegar
1 tablespoon peeled and chopped ginger
2 tablespoons soy sauce
1/2 cup orange juice
1 head broccoli, cut into florets, stems sliced into 1/4-inch rounds

Steps:

  • In a large wok or skillet over medium heat add 1 tablespoon of canola oil. Whisk the egg yolks in a small bowl and pour them into the hot pan. Cook until set, about 1 minute. Remove them from the pan to a plate and set aside.
  • Return the pan to the stove over high heat and add the remaining 1 tablespoon of oil. Add the broccoli and bean sprouts, and stir-fry until heated through, about 1 minute. Stir in the beef, rice and soy sauce. Season with pepper, to taste, and add the cooked egg. Toss and cook the mixture until hot, about 2 minutes. This is the perfect meal for that small amount of left over ground beef that remains after making burgers. I know it sounds weird, but this is so good. I came up with it one night when I had some leftover rice and a bit of ground beef in the fridge. Quick, easy and delicious. You can easily change the vegetables for whatever you have on hand. Measurements are approximate, and should work well being adjusted to whatever is in your fridge.

1/3 lb ground beef (I use 93%)
1/3 cup soy sauce
1 teaspoon ground ginger
1 teaspoon minced garlic
1/3 cup brown sugar
1 tablespoon oil
2 1/2 cups cooked rice (I like jasmine)
1 cup sliced mushrooms
1/2 cup sliced pea pods
1 cup of shredded cabbage
1 large onion (chopped)
3 eggs (scrambled)
1/3 cup scallion (chopped)
1 tablespoon garlic, minced
1/4 cup oil

Steps:

  • In a nonstick pan, heat the tbs. of oil and then cook the ground beef and garlic till meat is cooked through. Add the soy sauce, ginger and brown sugar, cooking till the sauce thickens. Set aside in a bowl.
  • In the same pan add 1 tbs.of oil and cook the vegetables and garlic. Once cooked, set aside.
  • Add the remaining oil and heat. Add the cooked rice and stir till heated through. Add the scrambled eggs and the vegetables, mixing through.
  • Finally add the ground beef making sure to also add the sauce. Mix thoroughly and enjoy.

This recipe is from a local Thai cooking class I took. The instructor tried to adapt the traditional recipe to use locally-available ingredients. This is delicious - different than any other fried rice we've had before. The Thai basil (I found it in an Asian grocery store in the city) really makes a difference.

1/2 lb beef, thinly sliced
1/4 cup vegetable oil
1 cup basil leaves
3 garlic cloves
2 Thai red chili peppers, green or 2 red chilies
2 cups cooked jasmine rice
2 tablespoons fish sauce
1 teaspoon sugar
1 medium cucumber, sliced

Steps:

  • In a mortar, pound garlic and chili, set aside. You can use a food processor or other chopper if you don't have a mortar.
  • Heat oil in pan to medium heat and stir in garlic/chili mix until aromatic.
  • Add beef and stir until no pink shows.
  • Add rice, fish sauce, and sugar - stir and let cook 3-5 minutes.
  • Stir in basil leaves (Thai basil is best).
  • Serve with sliced cucumber.

1 ¼ cups kimchi, or to taste
2 tablespoons olive oil
1 ½ cups diced fully cooked corned beef
3 cups cold cooked rice
¼ cup water
2 tablespoons gochujang (Korean hot pepper paste)
½ cup sliced green onion
2 teaspoons toasted sesame seeds
2 teaspoons sesame oil, or to taste
¼ teaspoon soy sauce

Steps:

  • Drain kimchi over a pot, reserving the juice.
  • Meanwhile, coat a pan with olive oil and add corned beef.
  • Chop kimchi into small chunks; add to the pan. Place pan over medium-high heat. Cook and stir until mixture is browned to your liking, 4 to 7 minutes. Add rice, kimchi juice, water, and gochujang.
  • Mix rice mixture together and spread evenly over the pan; cook for 3 to 4 minutes. Mix and pat rice down again. Continue cooking, mixing and pressing rice every 3 to 4 minutes, until evenly browned and crusty, 12 to 15 minutes total.
  • Mix green onion, sesame seeds, and sesame oil into the fried rice. Taste and season with soy sauce. Stir again. Transfer fried rice to serving bowls.

1 small bunch of bean sprouts
1/4 middle size white onion, shredded
Marinade sauce
1 teaspoon light soy sauce
1/2 teaspoon salt
1 tablespoon oyster sauce
1 teaspoon sesame oil
1 tablespoon starch
Stir fry sauce
1/2 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon vegetable oil
1/2 teaspoon sugar

Steps:

  • Cut beef into thin slices, put into a bowl. And then add all of ingredients for marinade sauce to marinade for at least 15 minutes. Heat up cooking oil in wok. Add beef slices in to cook around half minute or just until the color of beef slices changes. Transfer the beef slices out and also pour the oil out. Clean your pan or wok. Heat up around 1 and 1/2 tablespoons cooking oil, add rice noodle and onion shreds and straight after that stir in the stir fry sauce. Keep tossing your pan or wok until the noodles are well coated with the sauce. Return beef slices and bean sprouts to fry for another half minutes. Keep tossing your pan. 1 1-inch piece peeled fresh gingerroot, chopped
1 pound boneless beef top sirloin steak, flattened and cut into thin strips
2 garlic cloves, pressed
1 cup chopped broccoli
1 cup mushrooms, sliced
1 medium carrot, peeled and cut into julienne strips
1/2 cup diced red bell pepper
1/2 cup sliced green onions with tops
2 teaspoons sesame oil, divided
3/4 cup teriyaki baste and glaze

Steps:

  • 1. Place rice and water according to package directions into rice cooker. Microwave rice according to package directions; set aside. 2. Meanwhile, chop gingerroot. Using spiked end of meat tenderizer, flatten steak; slice into thin strips. In large resealable plastic bag, comgine gingerroot, steak and garlic; seal and refrigerate. 3. Chop broccolil Slice mushrooms using egg slicer. Julienne carrots into strips; cut strips into 1-inch pieces. Dice bell pepper and slice green onions. 4. Heat skiller over medium-high heat until hot. Add 1 teaspoon of the oil and half of the steak mixture; stir-fry 2-3 minutes or until outside surfaces of steak are no longer pink. Remove from skillet; keep warm. Repeat with remaining oil and steak mixture. Add broccoli, mushrooms, carrot and bell pepper to skillet; stri-fry 2 - 3 minutes. Add rice, green onions and teriyaki baste and glaze; stir until combined. Return steak mixture to skillet; stir and serve immediately.
