2 tablespoons all-purpose flour
1 pound flank steak, cut into 1/2-inch cubes
2 tablespoons oil, or more as needed
4 carrots, chopped
1 onion, diced
1 stalk celery, thinly sliced
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes
1 cup dry lentils
4 cups beef broth
2 teaspoons dried rosemary
11 ounces baby potatoes with skin
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Pour flour into a shallow bowl and dust steak with flour. Heat oil in a large skillet over high heat and sear beef on all sides until browned, 3 to 5 minutes. Remove from the skillet and set aside.
  • Add carrots, onion, celery, and garlic to the skillet and cook until softened, about 5 minutes. Add more oil if necessary.
  • Add tomatoes with juice, lentils, beef broth, rosemary, and browned beef pieces to the skillet and stir well. Reduce heat, cover pot halfway with a lid, and simmer for 40 minutes.
  • Add potatoes to the skillet. Simmer until lentils and potatoes are soft, about 20 minutes. Season with salt and pepper.

1 medium onion, chopped
4 garlic cloves, minced
1 can (15 ounces) pinto beans, undrained
1 can (14-1/2 ounces) diced tomatoes, undrained

1/2 cup water
1 to 2 tablespoons chili powder
2 teaspoons dried cilantro flakes

Steps:

1 pound lean ground beef (90% lean)
1 medium green pepper, finely chopped

1 package (16 ounces) frozen mixed vegetables, thawed and drained

  • Cook noodles according to package directions; drain. 2 tablespoons olive oil
1 1/2 pounds boneless beef chuck, cut into 1-inch cubes
Salt and freshly ground black pepper
3 large celery stalks, chopped
2 large carrots, peeled and chopped
1 large onion, chopped
6 garlic cloves, chopped
1 1/2 teaspoons chopped fresh rosemary leaves
1 1/2 teaspoons dried oregano
Six 14-ounce cans beef broth
One 28-ounce can diced tomatoes in juice
2 cups (about 11 ounces) lentils, rinsed
1/3 cup chopped fresh Italian parsley leaves

Steps:

  • Heat the oil in heavy large pot over medium-high heat. Sprinkle the beef with salt and pepper. Add half of the beef and cook until brown, about 8 minutes. Using a slotted spoon, transfer the beef to a bowl. Repeat with the remaining beef. Add the celery, carrots, onion, garlic, rosemary, and oregano to the pot. Saute until the onions are translucent, about 8 minutes. Return the beef and any accumulated juices from the bowl to the pot. Add the broth and tomatoes with their juice. Bring the soup to a boil. Reduce the heat to medium-low. Cover and simmer until the meat is just tender, stirring occasionally, about 1 hour. Add the lentils. Cover and continue simmering until the lentils are tender, about 40 minutes. Stir in the parsley. Season the soup, to taste, with salt and pepper. Ladle the soup into bowls and serve.

1 lb ground beef (you can substitute Smoked Sausage ring or Kielbasa for a change of pace)
1 cup dried lentils
1 medium onion, coursely chopped
1 (15 ounce) can diced tomatoes
1 cup corn (drained canned corn, or frozen, your choice)
2 -3 cups water (may need more)
2 bay leaves
2 teaspoons ground cumin
1 teaspoon chili powder (adjust to personal preferences)

Steps:

  • In large skillet or dutch oven, brown beef and onions, and drain fat. If you choose the Smoked Sausage or Kielbasa, slice into 1/3-1/2 thick slices and brown.
  • Sort lentils and wash.
  • Add lentils and ALL remaining ingredients to meat mixture.
  • Bring to boil, cover, and turn down to simmer. Simmer 45 mins, stirring every 15 mins or so and adding water if necessary. Most all water should be absorbed with only a little "sauce" left when ready to serve. Remove bay leaves, serve with bread and salad for complete meal.

1.5 cups lentils
2 tablespoons margarine
2 units onion
1 cloves garlic
1 pounds ground beef
2 units beef bouillon cubes
2 tablespoons long grain rice
1 teaspoons sugar
1 teaspoons salt
1 teaspoons ground cumin
0.5 teaspoons pepper
1 tablespoons cider vinegar
1 units parsley flakes

Steps:

  • Bring one quart water to boil in saucepan. Add lentils, cook 20 minutes. Drain, reserving liquid. Keep lentils aside.
  • In a deep skillet saute: margarine, onions and garlic. Stir in 1 lb. extra lean ground beef, brown well. Dissolve bouillon cubes in reserved liquid and add to meat mixture, cover and simmer 10 minutes.
  • Stir in: reserved lentils, rice, sugar, salt cumin and pepper. Bring to a boil, reduce heat, cover, and simmer 30 minutes or until lentils and rice are tender and liquid is absorbed (add more liquid if necessary). Check seasonings. Stir in cider vinegar and top with parsley.

1 large Spanish onion, chopped
½ green bell pepper, chopped
½ red bell pepper, chopped
½ yellow bell pepper, chopped
3 cloves garlic, minced
2 cups water
2 cups beef broth
2 cups stewed tomatoes
1 ½ cups dry lentils, rinsed and sorted
1 cup chopped fresh mushrooms
1 (6 ounce) can tomato paste
1 tablespoon white vinegar
½ teaspoon red pepper flakes
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground black pepper
½ cup boiling water, or as needed

Steps:

  • Heat a large pot over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and bell peppers to the pot and saute until slightly caramelized, 7 to 10 minutes. Add garlic and saute until fragrant, 1 to 2 minutes.
  • Stir 2 cups water, beef broth, tomatoes, lentils, mushrooms, tomato paste, vinegar, red pepper flakes, basil, oregano, and black pepper into the pot. Bring to a boil.
