BEST BEEF PARMIGIANA

Best Beef Parmigiana image

I love any kind of parmigiana dish, veal, chicken, whatever! But I must say this stuff is amazing! For the tomato sauce, I use my own homemade tomato sauce, which I have also posted the recipe for here on JAP. So if you're using the homemade sauce or a commercial spaghetti sauce skip the sauce steps and omit those ingredients....

Yield 4 people

Number Of Ingredients 13

½ lb Flank Steak
½ c Parmesan Cheese
½ c Italian Bread Crumbs
1 large Egg, beaten
1/3 c Canola Oil
1 small Onion, finely chopped
6 cloves Garlic, minced
1 (6 oz) can Tomato Paste
1 tsp Salt
½ tsp Granulated Sugar
½ tsp Ground Marjoram
1 ½ c Hot Water
½ block Mozzarella Cheese, shredded

Steps:

  • Cut steak into 3 x 1" slices Combine Parmesan and Italian breadcrumbs in a bowl and mix well Coat steak in egg Coat with Parmesan mixture Preheat the oven to 350 Heat canola oil in a large skillet over medium-high heat Cook steak in hot oil until browned on both sides, about 6 minutes Transfer steak to a 13 x 9" baking dish Sauté onion and garlic in skillet until tender, about 4 minutes Add tomato paste, salt, granulated sugar, marjoram and black pepper to onion mixture and mix well Stir in hot water gradually Bring to a boil Boil, stirring to deglaze skillet for 5 minutes Pour three-fourths of sauce over steak Top with the mozzarella and the remaining sauce Bake for 30-45 minutes Serve with parmesan fettuccine if desired

Tips:

  • To ensure the eggplant is not bitter, choose younger eggplants that are firm and have smooth, shiny skin.
  • Slice the eggplant evenly to ensure uniform cooking. You can use a mandoline for precise and consistent slicing.
  • Before frying the eggplant slices, pat them dry with paper towels to remove excess moisture. This helps prevent splattering and ensures a crispier texture.
  • Use a large skillet or griddle to fry the eggplant slices. This allows you to cook multiple slices at once, saving time.
  • Be careful not to overcrowd the pan when frying the eggplant, as this can cause the slices to steam rather than fry.
  • Use a combination of cheeses for the topping, such as mozzarella, Parmesan, and ricotta. This creates a flavorful and gooey cheese topping.
  • For a crispy crust on the chicken, use a seasoned breadcrumb mixture. You can also add grated Parmesan cheese or herbs to the breadcrumb mixture for extra flavor.
  • Bake the chicken parmesan in a preheated oven until the cheese is melted and bubbly and the chicken is cooked through.
  • Garnish the chicken parmesan with fresh basil or parsley before serving. This adds a pop of color and freshness to the dish.

Conclusion:

Beef parmesan is a delicious and versatile dish that can be enjoyed as a main course or as part of a larger meal. With its crispy eggplant, tender chicken, and melted cheese, it is sure to be a hit with everyone at the table. Whether you are looking for a quick and easy weeknight meal or a special dish for a dinner party, beef parmesan is a great choice.
