Categories     Main Dish Recipes     Pasta

Time 1h

Yield 4

Number Of Ingredients 11

1 ½ pounds beef cube steak
1 onion, sliced into thin rings
1 green bell pepper, sliced in rings
1 cup Italian seasoned bread crumbs
½ cup grated Parmesan cheese
2 tablespoons olive oil
16 ounces Classico® Tomato and Basil Sauce
½ cup shredded mozzarella cheese
12 ounces angel hair pasta
2 teaspoons minced garlic
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut cube steak into serving size pieces. Coat meat with the bread crumbs and parmesan cheese. Heat olive oil in a large frying pan, and saute 1 teaspoon of the garlic for 3 minutes. Quick fry (brown quickly on both sides) meat. Place meat in a casserole baking dish, slightly overlapping edges. Place onion rings and peppers on top of meat, and pour pasta sauce over all.
  • Bake at 350 degrees F (175 degrees C) for 30 to 45 minutes, depending on the thickness of the meat. Sprinkle mozzarella over meat and leave in the oven till bubbly.
  • Boil pasta al dente. Drain, and toss in butter and 1 teaspoon garlic. For a stronger garlic taste, season with garlic powder. Top with grated parmesan and parsley for color. Serve meat and sauce atop a mound of pasta! HINT: make the meat ahead of time, and refrigerate over night, the acid in the tomato sauce will tenderize the meat even more. If you do this, save the mozzarella till the last minute.

Instant Pot Garlic Parmesan Mashed Potatoes image

Some of the best tasting mashed potatoes you'll ever make. Making them in an Instant Pot makes this recipe one of the easiest as well! Free up some of your stove space on Thanksgiving by making this recipe instead!

Provided by Jonathan Melendez

Categories     Mashed Potatoes

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 10

4 lbs russet potatoes, peeled and rinsed
1 1/2 cups water
8 tablespoons unsalted butter, diced
4 garlic cloves, peeled
1 1/2 cups half-and-half (or whole milk)
2 teaspoons salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 cup grated parmesan cheese
2 tablespoons fresh chives, sliced

Steps:

  • Set a wire rack or steamer trivet inside the bowl of a 6-quart or larger Instant Pot. Place the whole potatoes on top of the rack in a single layer, as best as possible. Pour in the water. Lock the lid and set the valve to seal. Set the cook time at high pressure for 20 minutes. Allow the pressure to naturally release for 10 minutes before manually releasing any residual steam.
  • Carefully open the lid and remove the potatoes and rack onto a plate; set aside. Drain the water and return the bowl to the Instant Pot. Set to sauté and once the bowl is dry, add the butter and garlic. Cook, stirring often, until the butter has melted and the garlic has begun to brown. Stir in the milk and cook until the milk has warmed through.
  • Turn off the pressure cooker and add the potatoes back into the pot with the warmed milk and garlic. Using a potato masher, mash the potatoes until smooth. Stir in the salt, garlic powder, pepper and parmesan. Give it a taste and adjust seasonings accordingly. Serve warm with the chives on top for garnish.

Tips:

  • To save time, use pre-cut beef strips or steak.
  • For a more flavorful dish, marinate the beef in the Italian dressing for at least 30 minutes before cooking.
  • If you don't have a grill, you can cook the beef in a skillet over medium-high heat.
  • To make sure the potatoes are cooked through, pierce them with a fork. They should be tender when done.
  • For a crispy crust on the potatoes, cook them in a single layer on the baking sheet.
  • Serve the beef and potatoes with your favorite dipping sauce, such as ketchup, BBQ sauce, or ranch dressing.

Conclusion:

Beef with Parmesan Potatoes is a quick and easy weeknight meal that is sure to please the whole family. The beef is tender and flavorful, and the potatoes are crispy and cheesy. This dish is also a great way to use up leftover beef.
