½ small onion, finely chopped
½ red bell pepper, finely chopped
1 tablespoon olive oil
¾ pound lean ground beef

½ avocado - peeled, pitted and diced
¼ cup chopped fresh parsley
salt and pepper to taste
3 tablespoons olive oil
3 tablespoons seasoned rice vinegar
3 pita bread rounds, cut in half

  • Rinse rice in a fine mesh strainer under cold running water until no longer cloudy. Transfer to a medium saucepan and cover with 2 1/2 cups water. Bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes, remove from heat and let stand for at least 10 minutes, or until all liquid has evaporated. Set aside to cool.
  • Cook onion and bell pepper in 1 tablespoon oil over medium high heat until tender. Add ground beef and thyme, and cook until well browned, stirring occasionally and reducing heat if necessary.
  • In a bowl, stir together cooked rice, meat mixture, avocado, and parsley. In a separate bowl, whisk together olive oil, rice vinegar, and desired amount of salt and pepper. 1 jalapeno, minced
1 medium onion, chopped
1 can(s) diced tomatoes
1 Tbsp garlic, minced
1 c riced, cooked
1 pkg taco seasoning
salt to taste
pepper to taste
your favorite hot sauce to taste

Steps:

  • 1. Add jalapeno and onion to skillet and let it cook for a couple of minutes. Then add your ground beef and brown it. Drain & return to skillet. Now I use a cast iron skillet for all my cooking - I just love my cast iron! Anyway - Then add your garlic and mix it in. Add tomatoes stir it in and then add your taco seasoning - (I don't add any water to this) Then I let it sit on low for about 3 minutes or so then I add the rice and hot sauce and salt and pepper to taste. After this you let it sit on low for an additional 2 or 3 minutes to marry in the hot sauce and then serve.
  • 2. I usually serve this with mashed potatoes and some mexican cornbread. My family loves it! You can always add more peppers or more hot sauce or leave them out all together if you don't like the heat.
