2 teaspoons baking powder

1 tablespoon sugar
1/2 cup onion (finely chopped)
2 green onions (finely chopped)
1 or 2 tablespoons jalapeno peppers (finely minced)
1 large egg
1/2 cup beer
Tabasco sauce or cayenne, optional

Steps:

  • Gather the ingredients.
  • Put about 2 inches of peanut oil or canola oil in a deep, heavy pan. Heat to 360 F.

1/4 cup self-rising flour
1/8 teaspoon salt
2 onions, finely chopped
1 medium green bell pepper, finely chopped
1 tomatoes, finely chopped
1 large egg, lightly beaten
1 1/2 teaspoons Worcestershire sauce
1/8 teaspoon hot sauce
1/2 cup beer

Pinch of cayenne pepper

1 cup beer, plus more if needed
2 large eggs
1 onion, very finely chopped

Steps:

  • In a large cast-iron Dutch oven, heat the oil over high heat until it reaches 375 degrees F on a deep-fry thermometer.
  • To make the batter, in a large bowl, whisk together the cornmeal, baking powder, cayenne pepper and 1 teaspoon salt. In a second bowl or large liquid measuring cup, combine the beer, eggs and onions. Add some salt and pepper and whisk until smooth.
