Tips:

  • When choosing beets for your salad, look for ones that are small and firm. Avoid beets that are large and woody, as these will be less tender.
  • To roast the beets, simply toss them with a little olive oil, salt, and pepper, and then roast them in a preheated oven at 400 degrees Fahrenheit for about 30 minutes, or until they are tender.
  • Once the beets are roasted, let them cool slightly before peeling and slicing them.
  • For the dressing, whisk together olive oil, vinegar, honey, salt, and pepper in a small bowl until well combined.
  • To assemble the salad, simply combine the roasted beets, baby greens, goat cheese, and walnuts in a large bowl. Then, drizzle the dressing over the salad and toss to coat.
  • Serve the salad immediately, or store it in the refrigerator for later.

Conclusion:

This beet and baby greens salad is a delicious and healthy way to enjoy fresh, seasonal produce. The roasted beets add a sweet and earthy flavor to the salad, while the baby greens provide a crisp and refreshing contrast. The goat cheese and walnuts add a creamy and crunchy texture, and the honey-balsamic dressing ties all the flavors together perfectly. This salad is perfect for a light lunch or dinner, and it's also a great way to use up leftover roasted beets.
