6 large eggs, seperated
¼ teaspoon cream of tartar
¾ cup granulated sugar, divided
1 ¼ cups all purpose flour
¼ teaspoon kosher salt
3 cups heavy cream, cold
¾ cup heavy cream, hot
½ cup sugar
6 oz dark chocolate, chopped
fresh blackberry
fresh raspberry
chocolate shaving
8 sprigs fresh mint sprig
ribbon

Steps:

  • Preheat the oven to 350˚F (180˚C). Line 3 baking sheets (work in batches if necessary) with parchment paper and grease with nonstick spray.
  • Make the ladyfingers: In a large bowl, beat the egg whites and cream of tartar with an electric hand mixer until foamy. Gradually add ¼ cup sugar while continuing to beat until stiff peaks form.
  • In a medium bowl, beat together the egg yolks and remaining ½ cup sugar until thick and pale in color, about 3 minutes. Gently fold the yolks into egg white mixture with a rubber spatula. Sift in the flour and salt and fold to incorporate. Transfer the batter to a piping bag or zip-top bag fitted with a large round tip.
  • Release the bottom from a 9-inch springform pan and set the ring in the center of a prepared baking sheet. Starting at the center of the ring and working your way outward, pipe the batter in a spiral pattern, about 1 centimeter thick, leaving a ½-inch border around the edge. Remove the ring. With the remaining batter, pipe 40 3-inch (10-centimeter) long by 1-inch (2½-centimeter) wide cookies onto the remaining 2 prepared baking sheet.
  • Bake the spiral and cookies for 15-17 minutes, until lightly golden around the edges. Do not allow to get too dark. Let cool completely.
  • Make the chocolate mousse: In a large bowl, beat the cold heavy cream with an electric hand mixer until soft peaks form. Add the sugar and beat to incorporate.
  • In a medium bowl, pour the hot heavy cream over the chocolate. Stir with a rubber spatula until melted and smooth.
  • Fold the chocolate mixture into the whipped cream until incorporated.
  • Set the spiral cake base on the bottom of the springform pan and attach the ring. There should be a small gap between the cake and the ring mold. Line the gap on the inside edge of the ring with the ladyfingers, flat sides facing in. You want a snug fit so use as many ladyfingers as needed.
  • Pour the chocolate mousse into the center and smooth in an even layer. Chill until set, at least 4 hours in the refrigerator or about 2 hours in the freezer.
  • Garnish the charlotte with blackberries, raspberries, chocolate shavings, and mint sprigs. Release the springform and tie a ribbon around the outside of the charlotte.
  • Remove the ribbon before slicing and serving. Refrigerate any leftovers for up to 2 days.

For batter:
12 ounce semisweet chocolate, chopped
1 1/2 sticks unsalted butter
4 large eggs
1/2 cup sugar
For sauce:
10-ounce package frozen unsweetened raspberries, thawed
1/4 cup sugar
Accompaniment:
unsweetened whipped cream

Steps:

  • Preheat oven to 350°F. Butter a 9- by 2-inch round cake pan and line bottom with a round of wax paper. Butter paper and dust pan with flour, knocking out excess.
  • Make batter:
  • Melt chocolate and butter in a metal bowl set over a saucepan of simmering water, whisking until smooth.
  • Cool slightly.
  • Beat together eggs and sugar with an electric mixer until pale yellow, thick, and a ribbon forms when beaters are lifted, about 4 minutes with a standing mixer or 8 minutes with a handheld. Fold one fourth of egg mixture into chocolate mixture to lighten, then gently fold in remaining egg mixture.
  • Pour batter into cake pan and rap pan sharply on counter to eliminate air bubbles. Put cake pan in a hot water bath and place in middle of oven. Bake 45 minutes (top will be set, but a tester will not come out clean).
  • Remove cake from water bath and cool completely in pan on a rack. Run a thin knife around edge of cake and chill, covered, at least 4 hours and up to 12.
  • Make sauce:
  • Purée raspberries with sugar in a food processor or blender, then force through a fine sieve into a bowl. Chill until ready to serve.
  • Remove cake from pan:
  • Put cake pan directly on a burner at very low heat. Move pan around on burner to warm bottom, about 30 seconds, then shake pan to loosen cake. Invert cake onto a rack. Remove wax paper and invert cake onto a serving plate.
  • Bring cake to room temperature. Serve with sauce and whipped cream.

By modern standards, this cake is ridiculously rich. In fact, some of you may find it too intense, but most true chocolate fiends will be in heaven. Serve with ice-cold fresh raspberry sauce.

5 large eggs, at room temperature

  • Preheat oven to 425 degrees F (220 degrees C). Butter and flour a 9-inch cake pan.

6 ounces semisweet chocolate, chopped
5 tablespoons butter, room temperature
2 eggs, room temperature
½ teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Butter six ramekins or custard cups. Melt chocolate and butter slowly: You can do this in a double boiler, over, not in, simmering water, or in microwave, stirring to prevent scorching. Stir until completely smooth.
  • In a medium bowl, beat eggs with electric mixer until frothy, about 5 to 6 minutes. Stir vanilla and salt gently into beaten eggs. Fold half of egg mixture into chocolate mixture, mix well. Then fold remainder of egg mixture into chocolate mixture. Pour chocolate and egg mixture into prepared ramekins.
  • Line a roasting pan with a damp kitchen towel. Place ramekins on towel, inside roasting pan. Butter a piece of foil big enough to cover entire pan, and cover the ramekins, buttered side down. Place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the ramekins. Bake 5 minutes, then remove foil and bake 10 minutes more. Remove ramekins from water carefully. Let cool on wire rack for at least 3 hours. Cakes will firm up as they cool. Unmold each room-temperature ramekin onto a dessert plate, garnish and serve. Refrigerate unused portions.

Granola with vanilla yogurt has become a breakfast favourite around here. This version is maybe a bit too sweet for everyday, but it makes a very special treat! Now that my children are in school, I tend to use seeds rather than nuts and keep it in big granola clusters to make it easy to send in lunches.

5 cups oats
1 cup slivered almonds or 1 cup sunflower seeds
1/4 cup flax seed
2 tablespoons chia seeds
1/4 cup brown sugar
1/4 teaspoon salt
1/3 cup oil
1/3 cup water
1/3 cup honey
1/2 teaspoon vanilla
1/2-1 cup chocolate chips or 1/2-1 cup mini chocolate chip
1 1/2-2 cups dried raspberries or 1 1/2-2 cups dried strawberries, etc

Steps:

  • Preheat oven to 325 degrees F.
  • In a large mixing bowl, stir together the oats, nuts, seeds, brown sugar and salt.
  • Combine the the oil, honey, water and vanilla. Add to oat mixture and toss until well combined.
  • Spread the mixture evenly on a cookie sheet. Press lightly.
  • Bake for 20-30 minutes or until lightly browned. Stir occasionally if you like, but if you want clumps/clusters, DO NOT STIR at all!
  • Allow to cool for a few minutes, then transfer to a bowl and very gently fold in the chocolate chips. They should melt slightly in the warm granola.
  • Depending on the size of berries you use, you might prefer to chop them into smaller pieces before adding them. If you want the chocolate to coat them, stir them in while still warm; otherwise cool completely before add in them.
  • Store in an air tight container for up to two weeks (if it lasts that long!).
