SAUCE:
1 can (8 ounces) tomato sauce
1/2 cup packed brown sugar
1/4 cup vinegar
1 teaspoon ground mustard
MEAT LOAF:
2 pounds lean ground beef
2 large eggs, beaten
1 cup quick-cooking or rolled oats
1 medium onion, chopped
1 medium green pepper, chopped
1-1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon dried parsley flakes

Steps:

  • In a small bowl, combine sauce ingredients; set aside. In a large bowl, mix together meat loaf ingredients. Add half of the sauce to the meat loaf mixture; mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1 hour. Remove from oven; drain. Pour remaining sauce over loaf. Return to oven and bake 20 minutes longer or until no pink remains.

1 ½ pounds ground beef
1 ½ pounds ground pork
2 cups dry bread crumbs
1 cup finely chopped sweet onion (such as Vidalia®)
1 egg, beaten
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon dried tarragon
1 teaspoon sea salt
1 teaspoon ground black pepper
½ cup barbeque sauce
½ cup ketchup

Steps:

  • Preheat an outdoor grill for medium heat, and scrape the grates clean. Spray grates with nonstick cooking spray.
  • In a bowl, mix together the ground beef, ground pork, bread crumbs, onion, egg, Worcestershire sauce, garlic, tarragon, sea salt, and black pepper. Divide the mixture in half, and form 2 loaves, each about 4 inches in diameter and 6 inches long. In a small bowl, mix the barbecue sauce with ketchup until well combined.
  • Place each meatloaf directly on the prepared grill grates, then spread each with about 3 tablespoons of barbecue sauce mixture; grill until the loaves reach an internal temperature of at least 160 degrees F (73 degrees C), about 1 hour.

1 1/2 lbs ground beef
1 cup fresh breadcrumbs
1 diced onion
1 lightly beaten egg
1 1/2 teaspoon salt
1/2 teaspoon pepper
2 8-ounce cans tomato sauce
1/2 cup to thin sauce if necessary water
3 tablespoon vinegar
3 tablespoon brown sugar
2 tablespoon dijon mustard
2 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees.
  • Mix together the beef, breadcrumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

1 (6 ounce) package stove top beef stuffing mix, ground into coarse crumbs
3/4 cup beef broth
2 eggs, slightly beaten
1 (6 ounce) can crushed pineapple, drained
fresh coarse ground black pepper
1 cup sweet baby ray's barbecue sauce, divided
1/2 cup ketchup

Steps:

  • Preheat oven to 350º.
  • Mix beef, stuffing mix, broth, eggs, pineapple and ½ cup bbq sauce.
  • Shape into loaf, place on greased or foil-lined baking sheet.
  • or shallow baking dish.
  • Sprinkle top with coarse ground pepper.
  • Bake for about 1 1/2 hours or til no longer pink in center.

4 ounces thick-cut bacon (about 3 slices), cut into 1/2-inch-thick pieces
1 medium yellow onion, finely chopped (about 1 1/2 cups)
3 cloves garlic, minced
1 pound prepared BBQ ribs, bones removed, meat finely chopped (about 2 cups)
1 cup prepared pulled pork in BBQ sauce
1 pound 80/20 ground beef
2 large eggs
1/2 cup plain breadcrumbs
2 teaspoons mustard powder
1 1/2 teaspoons smoked paprika
1 teaspoon dried basil
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
1/2 cup prepared BBQ sauce, plus more for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
  • Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
  • Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
  • Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
  • Serve with additional warm BBQ sauce alongside.

When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

1 ½ teaspoons salt
