This Cranberry Salad is no doubt the best flavor enhancer to a Thanksgiving dinner. Its so good you will find yourself eating it as a dessert. Its easy to prepare and cooking time is mostly chilling time.

1 (12 ounce) package fresh cranberries
1 (20 ounce) can crushed pineapple
1 navel orange (peel still intact)
2 cups walnuts
2 (3 ounce) packages cherry gelatin

Steps:

  • Using a food processor, grind cranberries, orange and peel of orange, and walnuts till coarse.
  • In large mixing bowl mix together cranberries, walnuts, orange and pineapple.
  • Place in refrigerator for at least 3 hours.
  • Two hours before mix is chilled make cherry Jell-O according to package directions.
  • Fold Jell-O into the cranberry mixture.
  • Chill till dinner is ready or best chilled overnight.

This recipes was orginally my DH's Grandmothers and has been tweaked by my MIL. I didn't care for cranberry salad ever till I tried this. I have been making this for years now. Its more of a Jello than a salad. Great to get kids to eat something different. It's definitely something I look forward to eating every Thanksgiving and Christmas. Great on biscuits and rolls. I make this in a large glass decorative bowl because it doesn't look good if you try to transfer it to another dish for the meals. ** Note this is best if made the night before to give time for proper set. I have a lower sugar version posted also. Suggested serving size is about 3 tablespoons.

1 (12 ounce) bag cranberries, sorted, rinsed and drained
2 small oranges, peeled
1 1/2 cups sugar
1 (3 ounce) box jello raspberry gelatin powder
1 (3 ounce) box jello cherry gelatin (black cherry works well too)
1 1/2 cups boiling water
12 ice cubes

Steps:

  • In the blender puree cranberries and oranges. Add sugar to cranberry mixture and blend.
  • In a large bowl dissolve jell-o into boiling water. When dissolved add ice to begin the setting process. Remove what few ice cubes that are remaining.
  • Add cranberry mixture to jell-o. Mix well.
  • Cover with saran wrap and set in fridge to set.

2 cups cranberries
2 large oranges, peeled and seeded
1 carrot, chopped
1 cup chopped pecans
¾ cup white sugar
1 (8 ounce) can crushed pineapple, drained
2 (3 ounce) packages raspberry flavored Jell-O® mix
1 cup boiling water
1 cup cold water

Steps:

  • In a food processor, combine the cranberries, oranges, carrot and pecans. Process until finely ground; add sugar and pineapple, mix well.
  • In a mixing bowl, combine the gelatin and boiling water. Stir until gelatin is dissolved and add cold water.
  • Mix together the fruit mixture and gelatin; pour into dish or mold and refrigerate until chilled.
