BEST EVER BBQ CHICKEN

Best Ever BBQ Chicken image

The BBQ sauce on this juicy grilled chicken is out-of-this world! We "wow" people with this recipe every summer during outdoor entertaining. I always double the sauce recipe to have extra on the side for dipping. The original recipe calls for 2 small boiler chickens quartered but we prefer using bone-in, skin on chicken breasts. Slow cooking on the grill gives it the best flavor. I hope you enjoy this as much as we do - it's a favorite at this house.

3 garlic cloves, minced
2 teaspoons butter
1 cup Heinz ketchup (a must for us)
1/4 cup packed brown sugar
1/4 cup chili sauce (Heinz is a good one)
2 tablespoons Worcestershire sauce
1/2-3/4 tablespoon celery seed
1 tablespoon prepared yellow mustard

  • In a saucepan, saute the garlic in butter until tender.
  • Add the next 8 ingredients.
  • Bring to a boil, stirring constantly.
  • Remove from the heat and set aside.
  • Grill the chicken, covered over medium heat for 30 minutes, turning occasionally.

Time 45m

Yield 28 wings (approx)

Number Of Ingredients 10

3 tablespoons oil
1 small onion, minced
2 -3 garlic cloves, minced
2 teaspoons grated peeled fresh ginger
1/4 teaspoon salt (I use seasoned salt)
1/8 teaspoon cayenne pepper (or to taste or use crushed red pepper flakes)
3 tablespoons vinegar, perferably apple cider
2/3 cup ketchup
1/2 cup apricot preserves
3 1/2 lbs chicken wings

Steps:

  • Set oven to 350 degrees F.
  • In a saucepan add first 6 ingredients; cook stirring occasionally until onion is softened, about 3 minutes.
  • Add vinegar, cook 1 minute.
  • Stir in ketchup and preserves; bring to a light boil then reduce heat to low; simmer until mixture is thickened and reduced to 1 cup (about 20 minutes).
  • Meanwhile line broiler pan with foil then coat with cooking spray.
  • Reserve 1/4 cup sauce.
  • In a large bowl toss wings with remaining sauce, then place wings in pan.
  • Bake 30 minutes on lowest rack brushing occasionally with reserved sauce.
  • Remove broiler rack from lowest position, then set oven rack for broiler position.
  • Set oven heat to broiler.
  • Broil wings for 2 minutes or until browned.

Tips:

  • Use a flavorful marinade: The key to juicy, flavorful BBQ chicken is to use a marinade that's packed with flavor. Be sure to use a variety of spices and herbs, and don't be afraid to experiment with different flavor combinations.
  • Grill your chicken over indirect heat: This will help to prevent the chicken from drying out and will give it a more even cook.
  • Baste your chicken regularly: basting the chicken with the marinade or a mixture of melted butter and spices will help to keep it moist and flavorful.
  • Let your chicken rest before serving: This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

With these tips in mind, you're sure to be able to make the best BBQ chicken ever! So fire up your grill and get grilling!
