BEST EVER BBQ CHICKEN

Best Ever BBQ Chicken image

The BBQ sauce on this juicy grilled chicken is out-of-this world! We "wow" people with this recipe every summer during outdoor entertaining. I always double the sauce recipe to have extra on the side for dipping. The original recipe calls for 2 small boiler chickens quartered but we prefer using bone-in, skin on chicken breasts. Slow cooking on the grill gives it the best flavor. I hope you enjoy this as much as we do - it's a favorite at this house.

GRILL MASTER CHICKEN WINGS

These wings are always a hit! I grill them up before a party and keep them hot in a low oven. I always use Frank's RedHot® sauce. It's got lots of flavor and isn't too spicy.

Time 45m

Yield 28 wings (approx)

Number Of Ingredients 10

3 tablespoons oil
1 small onion, minced
2 -3 garlic cloves, minced
2 teaspoons grated peeled fresh ginger
1/4 teaspoon salt (I use seasoned salt)
1/8 teaspoon cayenne pepper (or to taste or use crushed red pepper flakes)
3 tablespoons vinegar, perferably apple cider
2/3 cup ketchup
1/2 cup apricot preserves
3 1/2 lbs chicken wings

Steps:

  • Set oven to 350 degrees F.
  • In a saucepan add first 6 ingredients; cook stirring occasionally until onion is softened, about 3 minutes.
  • Add vinegar, cook 1 minute.
  • Stir in ketchup and preserves; bring to a light boil then reduce heat to low; simmer until mixture is thickened and reduced to 1 cup (about 20 minutes).
  • Meanwhile line broiler pan with foil then coat with cooking spray.
  • Reserve 1/4 cup sauce.
  • In a large bowl toss wings with remaining sauce, then place wings in pan.
  • Bake 30 minutes on lowest rack brushing occasionally with reserved sauce.
  • Remove broiler rack from lowest position, then set oven rack for broiler position.
  • Set oven heat to broiler.
  • Broil wings for 2 minutes or until browned.

Tips:

  • Choose the Right Wings: Select plump, meaty wings with smooth skin and no discoloration.
  • Proper Preparation: Pat the wings dry and remove any excess fat. This helps the marinade or rub adhere better.
  • Season Liberally: Use a flavorful combination of spices, herbs, and seasonings to create a marinade or rub. Experiment with different flavors to find your favorites.
  • Marinate or Rub: Allow the wings to marinate in a flavorful liquid or coat them in a rub for at least 30 minutes, or up to overnight. This infuses the wings with flavor.
  • Cook Thoroughly: Whether you're grilling, baking, or frying, ensure the wings are cooked thoroughly to an internal temperature of 165°F (74°C).
  • Crispy Skin: For crispy skin, consider double-cooking the wings by first baking them at a lower temperature and then finishing them off at a higher heat.
  • Sauce It Up: Serve the wings with your favorite sauce or glaze. Whether you prefer a classic BBQ sauce, a spicy Sriracha sauce, or something unique, the possibilities are endless.

Conclusion:

Creating delicious BBQ chicken wings is an art form that combines flavorful seasonings, proper cooking techniques, and a touch of creativity. Experiment with different marinades, rubs, and sauces to find your perfect combination. Whether you enjoy them as an appetizer, main course, or party snack, these BBQ chicken wings are sure to satisfy your taste buds. So fire up the grill, preheat the oven, or heat the oil, and get ready to indulge in a finger-licking experience that will leave you craving more. Happy grilling, baking, or frying!
