FRESH STRAWBERRY PIE

Fresh Strawberry Pie image

From a Houston Junior League cookbook, this is by far my favorite way to eat fresh strawberries. Quick, fresh, sweet and not at all gloppy. I think it's better when eaten right away than when chilled. If you purchase the red gloppy substance sold in your grocer's produce section to make strawberry shortcake or pie, please stop!!! This recipe can also be used as a quick strawberry shortcake or poundcake topping. You'll be suprised at the bright red color without food coloring, corn syrup or other nasty things that detract from beautiful fresh berries.

FRESH STRAWBERRY PIE

Fresh Strawberry Pie image

This pie is a celebration of perfectly ripe, summertime strawberries. Only two cups of the berries are cooked down into a quick jam, which holds the rest of the fruit together for a delightfully fresh pie. With a crunchy shortbread crust and a cloud of freshly whipped cream, it's reminiscent of strawberry shortcake - but maybe even better.

Provided by Samantha Seneviratne

Categories     pies and tarts, dessert

Time 45m

Yield 8 to 10 servings

Number Of Ingredients 14

10 2/3 ounces/300 grams shortbread cookies (two 5 1/3-ounce packages)
3 tablespoons granulated sugar
1 tablespoon all-purpose flour
1/4 teaspoon kosher salt
1/4 cup/55 grams unsalted butter, melted
2 1/2 pounds/about 1 kilogram strawberries (about 8 to 10 cups), hulled
1/3 cup/65 grams granulated sugar
3 tablespoons strawberry preserves
1/4 cup/30 grams cornstarch
Pinch of kosher salt
1 tablespoon fresh lemon juice
1 cup/240 milliliters cold heavy cream
1 tablespoon confectioners' sugar

Steps:

  • Prepare crust: Heat oven to 350 degrees. In a food processor, combine shortbread cookies, sugar, flour and salt and blend until you have fine crumbs. Transfer crumbs to a medium mixing bowl. Add butter and mix with a fork until crumbs are evenly moistened. Tip crumbs into a standard 9-inch pie plate and press them in an even layer on the bottom and up the sides of the plate. Bake until golden brown and set, 15 to 20 minutes. Transfer to a rack to cool completely.
  • Prepare filling: Cut each of the strawberries in quarters or eighths, if they are large. Transfer 2 cups berries to a small saucepan and crush completely with a potato masher. Set aside the remaining berries in a large bowl. Add the sugar, preserves, cornstarch, 1 tablespoon water and salt to the saucepan.
  • Bring strawberry mixture to a boil over medium heat and then cook it an additional 2 minutes, stirring constantly. Add strawberry mixture and lemon juice to the strawberries in the bowl and stir to combine. Transfer to the prepared crust and gently tap it down into an even layer. Transfer to the fridge to set for at least 4 hours.
  • Just before serving, whip cream, confectioners' sugar and vanilla, if using, to soft peaks. Top pie with whipped cream.

Time 1h15m

Yield 8

Number Of Ingredients 9

1 recipe pastry for a 9 inch single crust pie
¾ cup white sugar
¾ cup all-purpose flour
6 tablespoons butter
1 pinch ground nutmeg
4 cups fresh strawberries, hulled
½ cup white sugar
½ cup all-purpose flour
1 tablespoon cornstarch

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a drip pan on lowest shelf to catch pie juices.
  • To Make Topping: In a medium bowl, mix until fluffy the 3/4 cup sugar, 3/4 cup flour, butter, and nutmeg.
  • Place cleaned strawberries in a deep bowl. In a separate bowl, mix together the 1/2 cup sugar, 1/2 cup flour, and cornstarch. Gently coat berries with this mixture; be careful not to crush berries.
  • Pour berries into prepared pie crust mounding them in the middle; mounding is necessary as the berries will sink as they bake. Cover berries with crumb topping and top crumbs with about 15 pea-sized blobs of butter. Wrap edges of pie crust with foil to prevent burning.
  • Bake pie in preheated oven for 20 minutes, then reduce heat to 375 degrees F (190 degrees C) and bake for an additional 40 minutes. When there are 10 minutes left of baking, sprinkle a little extra sugar over crumb topping and then finish baking.

Tips:

  • Selecting the finest strawberries: Choose plump, vividly red strawberries with no blemishes. Avoid berries with bruises or mold.
  • Preparing the Crust: Blend together flour, sugar, and salt in a food processor. Add cubed butter and pulse until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time until the dough just comes together. Form into a ball, wrap with plastic, and chill for at least 30 minutes.
  • Chilling the Dough: Chilling the dough prevents it from becoming too warm and difficult to work with. This helps create a flaky, tender crust.
  • Rolling Out the Dough: Use a lightly floured surface and rolling pin to roll out the dough to a 12-inch circle. Be careful not to overwork the dough, as this can make it tough.
  • Baking the Crust: Bake the crust for 10-12 minutes at 375°F until golden brown. This pre-baking step helps prevent the crust from becoming soggy when filled.
  • Macerating the Strawberries: Combine sliced strawberries, sugar, lemon juice, and cornstarch in a bowl. Allow them to sit for 30 minutes, stirring occasionally. This process draws out the natural juices of the strawberries, creating a flavorful filling.
  • Assembling the Pie: Pour the macerated strawberries into the pre-baked crust. Dot the top with butter and cover with the top crust. Crimp the edges to seal and brush with milk. Sprinkle with sugar for a golden crust.
  • Chilling and Serving: Bake the pie for 45-50 minutes at 375°F until the crust is golden brown and the filling is bubbling. Allow the pie to cool completely before serving. Chilling the pie for several hours or overnight enhances the flavors and makes it easier to slice.

Conclusion:

With its vibrant red strawberries, flaky crust, and sweet-tart filling, this Fresh Strawberry Pie is a classic summer dessert that's easy to make yet impressive to serve. Whether it's for a backyard barbecue, a family gathering, or a special occasion, this pie will surely be a hit.
