Someone brought this salad to a pot luck dinner and I had to have the recipe. I have made it many, many times since then and I have been asked for the recipe every time I bring it somewhere. It is also a great way to get kids to eat spinach!

BEST EVER SUMMER STRAWBERRY SPINACH SALAD
This is a very simple and delicious salad to make, especially in the summer. My family does not like spinach very much, but they love this dish. Also great to take to pot luck or church dinners as it is a "different" salad. The secret is to find the pale green fresh baby spinach leaves as opposed to the larger, tough, dark green ones in a bag! Hope you enjoy it as much as we do!

Tips:
- Always use fresh, ripe strawberries for the best flavor. If you can, try to get organic strawberries.
- Use a variety of lettuces and greens for a more flavorful and colorful salad. Spinach, arugula, and romaine lettuce are all good choices.
- Don't be afraid to add other fruits and vegetables to your salad. Sliced apples, pears, or blueberries would all be great additions.
- For a more hearty salad, add some cooked chicken, shrimp, or tofu.
- Make sure your poppy seed dressing is well emulsified before adding it to the salad. This will help the dressing coat the salad evenly.
- Serve the salad immediately after dressing it. This will prevent the salad from getting soggy.
