Unsalted butter, for bowl
1/3 cup warm water (110 degrees)
1 teaspoon active dry yeast
1/4 cup granulated sugar
1/2 teaspoon kosher salt
1/2 cup coconut milk, plus 1/3 cup for glaze
1 large egg yolk
2 to 2 1/4 cups unbleached all-purpose flour, plus more for dusting
1/4 cup unsweetened shredded coconut
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
Safflower oil, for frying
1 1/4 to 1 1/2 cups confectioners' sugar
1 cup sweetened coconut flakes, toasted

Steps:

  • Butter a medium bowl; set aside. In a small bowl, combine water and yeast. Let stand until foamy, about 5 minutes. In a bowl, whisk together granulated sugar, salt, and 1/2 cup coconut milk.
